A premium limited release Shiraz with only around 450 dozen produced from Paracombe Wines in the Adelaide Hills. All fruit for this wine was sourced exclusively from Paul and Kathy Drogemuller's vineyard at Paracombe. The grapes were carefully hand picked over a five-week period. Following a slow cool ferment in small open tanks the grapes were basket pressed. The wine matured for two years in both French and American Oak barriques. The result is an elegant red wine with excellent depth of color, aroma and flavor. The bouquet offers raspberry and dark cherry and plum aromas with generous fruit flavors on the palate. Paracombe's distinctive pepper and spice characters and fine tannin provide more depth and character to this wine. This wine can certainly be enjoyed now and will cellar for a further seven years.

Paracombe is not a large winery, but it is a very special one. It's located in the Adelaide Hills, one of the most highly regarded cool climate regions of South Australia. The grapevines are meticulously cared for. And to take advantage of the morning sun for optimum fruit ripening, most of the vines are planted facing east. All red grapes are handpicked and the fruit is fermented cool in open tanks, hand plunged and then basket pressed. None of the wines are filtered. A three-year barrel rotation of French and American oak is employed with the red wines resting in oak for 20 months. The Paracombe vineyard was originally planted in 1983, following the Ash Wednesday bush fires that devastated the Adelaide Hills in February of that year. Proprietors Paul and Kathy Drogemuller took over a former dairy farm with the belief that it would be a good vineyard site and produce high quality fruit. Paracombe's first vintage was 1992, and although small in total production, the wines have developed a large following among wine lovers and restaurateurs in Australia, the United Kingdom, and the U.S. Today, in fact, much of Paracombe's yearly production is sold out before it's even bottled.

Having brought fame and merit to the country’s wine scene since the early 1950s, namely via the debut of Penfolds Grange, today Syrah (Shiraz) claims rank as the most widely planted grape in Australia. In fact, the amount of land dedicated to Shiraz in Australia is now almost equivalent to what it is in France. Australian Shiraz has its own personality with flavors and aromas of intense blackberry, fruitcake, menthol, tobacco leaf and umami. Conveniently one can find great Australian Shiraz at a variety of price points but the very best will be dense, gloriously complex and capable of long aging.
