Winemaker Notes

The Barolo D.O.C.G. CAROBRIC® was born in 1996 as a combination of three historical and complex terroir. The personality is about focus, precision of elements, intensity and length. The aromatics are lifted with a beautiful tension and clarity. As per all our Barolo, we pursue the purest expression of terroir. Therefore vinification and aging are all the same to underline specific expression of the vineyards.

    Very fresh and creamy on the nose. The palate is full of strawberries and fresh roses. Medium to full body and ultra-fine tannins that are integrated and polished. Lightly chewy on the finish. Give it three to four years to soften.

    A high-pitched, aromatic Barolo, sporting floral, spice and berry flavors, backed by a solid line of tannins. Tobacco and mineral accents come into play on the finish. Best from 2020 through 2032.
  • 93
    Intensely fragrant, this opens with stunning aromas of iris, violet, perfumed berry and a whiff of botanical herb. Linear and refined, the focused palate offers red cherry, strawberry, white pepper and a hint of star anise framed in taut refined tannins and bright acidity. It shows great tension and energy. Drink 2023–2035.

Paolo Scavino winery was founded in 1921 in Castiglione Falletto from Lorenzo Scavino and his son Paolo. Enrico Scavino together with the daughters Enrica and Elisa, fourth generation, run the family Estate. Through 70 years of work, Enrico Scavino has researched and purchased some of the most historic vineyards cultivated with Nebbiolo for Barolo to experience and show the uniqueness of each site.  

The Scavino family owns 30 hectares entirely in the Barolo area and vinifies grapes from their own vineyards located in the villages of Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d’Alba, Verduno, Roddi and Monforte d’Alba. 

The approach to both viticulture and winemaking is scrupulous, respectful and is aimed at preserving and therefore enhancing the expression and peculiarities of each vineyard in the wines.
