Winemaker Notes

Much more than a simple fruit bomb, this wine is intriguingly subtle at first, with complex, savory aromas (soy sauce, nutmeg and green tea) emerging with time in the glass. The palate is medium to full bodied and has a gentle mouth feel with persistent firm tannin to finish. It comes across as a strong silent type which will have a lot to say if you take the time to get to know it. This is a wine which should evolve nicely in the cellar over the next 10 years and more.

Choose strongly flavored dishes such as lamb shanks or Osso Bucco to accompany young vintages. As the Noon Reserve Shiraz matures, tannins mellow and complexity builds and it becomes a good partner for a simple but high quality beef T-Bone or aged rump steak.

The 2016 Shiraz Reserve is a star, marrying hints of mint with dark chocolate, blackberries and black olives. Full-bodied and plush, it features a lovely velvety texture that persists right to the end of the long finish. Big, powerful and intense, it retains a sense of softness and elegance, driven by the fineness of the tannins and notions of red raspberries that appear on the finish.

Noon, Australia
Noon Winery Image
The darling of the Australian small winery scene, Noon has a great following both in Australia and in particular the US. Drew Noon produces some unique wines packed with ripe red fruit and often high levels of alcohol. Drew Noon took over operating the family owned Noon winery after spending time as Winemaker at Cassegrain and other ventures in Victoria.

The Eclipse and Reserve shiraz can command high levels of capital increase and are definitely wines to hold on to (if you can get them).

Marked by an unmistakable deep purple hue and savory aromatics, Syrah makes an intense, powerful and often age-worthy red. Native to the Northern Rhône, Syrah achieves its maximum potential in the steep village of Hermitage and plays an important component in the Red Rhône Blends of the south, adding color and structure to Grenache and Mourvèdre. Syrah is the most widely planted grape of Australia and is important in California and Washington. Sommelier Secret—Such a synergy these three create together, the Grenache, Syrah, Mourvedre trio often takes on the shorthand term, “GSM.”
