    Perhaps the finest Cabernet Sauvignon made in Australia is Noon’s inky/purple-hued 2003 Cabernet Sauvignon Reserve, a classic Cabernet with riveting levels of creme de cassis and graphite characteristics. Full-bodied and deep, with superb balance, high but sweet tannin, fabulous concentration, and a long 60 plus second finish, this is stunning Cabernet Sauvignon from 33-year-old vines cropped at 1.5 tons of fruit per acre. Anticipated maturity: 2006-2020+.

    Alluring aromas of black pepper, vanilla, chalk and a streak of eucalpytus kick off this excellent wine. Tannins on the palate are still young and dominant, but the wine's attractive black plum and soil flavors will show through in a few years' time. Finishes long and smooth. Drink 2007+.

The darling of the Australian small winery scene, Noon has a great following both in Australia and in particular the US. Drew Noon produces some unique wines packed with ripe red fruit and often high levels of alcohol. Drew Noon took over operating the family owned Noon winery after spending time as Winemaker at Cassegrain and other ventures in Victoria.

The Eclipse and Reserve shiraz can command high levels of capital increase and are definitely wines to hold on to (if you can get them).

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

Vinified on its own or in Rhône Blends, these hot-climate wines are deeply colored and high in extract with signature hints of dark chocolate and licorice. Cabernet Sauvignon is also produced in a similar style.

Whites, often made from Chardonnay or Sauvignon Blanc tend to be opulent and full of tropical, stone and citrus fruit.
