Winemaker Notes

Medium deep color, with remarkably little brick hue development. Attractive, mature nose with cedar, charcoal and clove along with blackberries. Quite fresh. Not a big wine. More elegant and long rather than round in shape. The structure is quite tight, the tannins still firm - a feature of the 1999 wines from the beginning.

Lamb and Cabernet is a proven and classic match. Roast leg or rack of lamb with lots of rosemary and garlic and roasted vegetables is an ideal accompaniment to the Reserve Cabernet, especially the older vintages. In fact just about anything roasted is lovely...a small roast chicken wrapped in pancetta or stuffed with herbs under the skin would be perfect. It is worth decanting this wine half an hour prior to serving as aeration will help express the wines aromas and flavors.

    The 1999 Cabernet Sauvignon Reserve could easily be called a Pauillac from Australia. Dense ruby/purple, a classic Cabernet nose of cedar wood, smoke, cassis, mineral, lead pencil, and new oak soars from the glass. In the mouth, it is full-bodied, with fabulous concentration and multi-layered texture, high levels of glycerin, and a seamless, concentrated, long finish with well-integrated tannin, acidity, and alcohol. This is no wimpish wine at 14.6% alcohol, but sadly, there are only 290 cases of this 100% Cabernet Sauvignon made from 25-30 year old vines. Anticipated maturity: now-2020.

Drew Noon produces some unique wines packed with ripe red fruit and often high levels of alcohol. Drew Noon took over operating the family owned Noon winery after spending time as Winemaker at Cassegrain and other ventures in Victoria.

The Eclipse and Reserve shiraz can command high levels of capital increase and are definitely wines to hold on to (if you can get them).
