Here and Heaven is all about treble, with high, lilting scents of lemon thyme and Thai basil. On the palate, Lemon cream and firm mango are wrapped in fresh baked croissant. The finish lingers with hints of basil, cinnamon, and mace. The crisp, lively flavors of Here & Heaven remind me of the treble laden sounds of mandolin and banjo juxtaposed against each other, which is why I chose the Bluegrass inspirations of Chris Thile’s song Here and Heaven to represent the musical direction that I feel the wine expresses.

    Very tense aromas of pomelo pith and tangerine rinds meet with a baked yogurt hint of dairy on the nose of this bottling. The palate follows a tight line of crushed almond, roasted apple and white ash, framed by tons of acid and a grippy texture.

One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it is grown and how it is made. While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.
