    The 2007 Cabernet Sauvignon is dark red with a violet hue. Aromas of bing cherry, plumb, all spice, cinnamon, leather, and a touch of forest floor fill the glass. A soft, fruit forward entry combines with balanced acidity and low alcohols to coat your mouth with a multitude of flavors. Layers of red and black fruit segue into a finish accented by vanilla, caramel and a hint of butterscotch from the new American Oak. Soft, but present tannins once again allow this young JUSTIN Cabernet Sauvignon to be approachable immediately.

    Pair with properly seasoned roasted, grilled, sautéed meats, poultry and game. Best with dishes such as lamb loin with red wine essence, filet mignon and roasted duck breast. Cheeses that match this wine well are sharp cheddar, Abbaye de Belloc, Danish blue, aged gouda, reblochon and San Andreas.

    Justin and Deborah Baldwin acquired their land in 1981 and planted 72 acres in vineyards that same year. Initially they were wine growers, selling to other wineries. Then, in 1987, they harvested their first grapes bottled under the Justin label. Justin Winery concentrates on two Bordeaux styled red wines: Isoscleles, which is a 100% estate blend of Cabernet Sauvignon, Merlot and Cabernet Franc and Justification, a blend of Cabernet Franc and Merlot. Varietals are planted to specific soil types on their hillside vineyards 8 miles from the Pacific Ocean, on the Central Coast.

    As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the region’s number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didn’t emerge as a significant grape here until the 1970’s. But since then it has definitely made up for lost time.

    Legendary winemaker and consultant Andre Tchelistcheff first recognized Paso’s potential with Cabernet Sauvignon in the early 1960’s. The calcareous soil and dramatic diurnal temperature changes of Paso’s westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region's ideal combination of soil and climate to deliver the best fruit possible.

    The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.
