    The most south-facing of all' is how Olivier Lamy describes this classic Saint Aubin from a vineyard on hard limestone soils at 300 metres. The vines certainly suffered from heat stress in 2018, but there's no sign of that in the finished wine, which is bright, chalky and well balanced, with gentle oak spice and the pithy tang that's a feature of the domaine's style.

    The 2018 Saint-Aubin 1er Cru Clos du Meix reveals aromas of crisp green apple, white flowers, citrus zest and freshly baked bread, followed by a medium to full-bodied, round but incisive palate that's chalky and mineral, with fine depth at the core and a long finish. This rocky, southeasterly exposed site is located by the village, below Derrière Chez Edouard.

The Lamy family has been working in the vineyards since 1640. Domaine Hubert Lamy was created by Hubert Lamy in 1973. Before creating his own domaine Hubert worked with his father, Jean Lamy. At that time the domaine was around 8 hectares in size, planted mainly in 'regional appellations'. Most of the development of the Domaine was during the 1990s when new vineyard plots were bought or rented (Clos de la Chatenière, Derrière Chez Edouard, Murgers des dents de Chien, Clos du Meix, Santenay Clos des Hâtes) or planted (En Remilly). Some parcels which were planted with Pinot Noir vines were changed to Chardonnay vines because it was considered this was a better choice for the soil type (La Princée). Olivier Lamy, having first studied winemaking and commerce, joined the Domaine in 1995. Prior to joining his father he did training courses in several other Domaines and tasted wines from all over the world. With this experience he was able to bring new ideas and new methods of working in the vines and in the cellar. Today the Domaine has 18.5 hectares of vines - 80% in Chardonnay and 20% in Pinot Noir. The vines are in several appellations - Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay. There are 20 appellations in total and the Domaine produces around 110,000 bottles per year.

A steep, upcountry basin (referred to as a combe in French) in the southern end of the Côte de Beaune, St. Aubin is a direct westerly neighbor to Chassagne-Montrachet and Puligny-Montrachet. Recent years have seen a boom in white wine production so that now Chardonnay accounts for more than three quarters of area under vine here. Two thirds of St. Aubin is classified Premier Cru (30 total vineyards); most notable include Les Charmois, La Chatenière, En Remilly and Les Murgers Dents de Chie. The Premiers Crus of St. Aubin, wrapping like a ribbon upon the southeast and southwest facing slopes, produce fresh and elegant whites from Chardonnay. When young, these tout a refreshing grip and convey qualities of white flowers, citrus, pear, green almond and wet stone. Given some age, a graceful evolution occurs so that older St. Aubin whites express richer aromas of beeswax, honey, marzipan and spice.
