Winemaker Notes

Blackberries and plums dance on your nose and across your palate. Savory, spicy and dusty notes tempt you further. There are also hints of expresso. The wine keeps evolving in the glass beckoning yet another sip. Stylistically, this is much more an Old World wine, similar to Burgundy, which the clone lends itself to. Pair with lamb chops and reduction sauce, smoked tri-tip and Lompoc pinquitos beans or mincemeat pie. Easy 8-10 years for aging.

    A touch of earthy funk shows at first on the nose of this bottling, laced throughout the dark cranberry, pomegranate, crushed grapeseeds and a lavish layer of violets. The palate is heavily spiced with clove, gingerbread, a touch of juniper, lots of earthy sagebrush and a strong cranberry fruit, all seasoned by an iron-powered minerality.

Norm Yost has been making wine for over thirty vintages and has a particular passion for Pinot Noir. In 2000, he launched his own label, Flying Goat Cellars, specializing in vineyard designated Pinots from California’s Central Coast.

Two pygmy goats, Never and Epernay, inspired Norm to name his winery Flying Goat Cellars. The goats were his pets and lawnmowers and came to be a source of entertainment and enjoyment, with their unrestrained spiral loops, flipper turns and straight-legged leaps. When pondering a name for his new wines and brand, Norm wanted to project fun, enjoyment, and happiness. While many people put their own name or their children’s name on their label or vineyard, Norm’s playful spirit opted to name it after his kids. His kids, of course, were those two pygmy goat pets, who had always inspired him and made him laugh.

Norm shared his passion with Kate Griffith by courting her with his first release of Goat Bubbles in 2006. We don’t know if it was the bubbles or the winemaker's charm but it culminated in a marriage and a family of wines.

Now Flying Goat Cellars produces about 2,500 cases a year and includes three labels: Flying Goat, Goat Bubbles and YNOT. Flying Goat focuses on vineyard designated Pinot Noirs and Pinot Gris. Goat Bubbles offers four vineyard designated sparkling wines: Rosé, Blanc de Blancs, Blanc de Noirs, and Crémant, all made in the traditional méthode champenoise with the secondary fermentation in the bottle. YNOT is Pinot Noir blended from the finest of Santa Barbara County vineyards.

Santa Maria Valley lies mainly in northern Santa Barbara County, with a small portion of it overlapping southern San Luis Obispo County. It is close to the Pacific, and runs east-west, which means warmer air in the eastern end draws cool air off the ocean in the west, and brings it through the valley. This effect, combined with abundant sunshine, lengthens the growing season. The longer growing season leads to long hang time, which promotes both ripeness and optimal acidity levels in grape berries. As early as the 1970’s, Santa Maria Valley was recognized as being a superior source of wine grapes, certainly including Chardonnay and Syrah. But arguably the top variety here is Pinot Noir.

Originally a domain primarily of growers, including the Miller Family of the justifiably famous Bien Nacido Vineyard, this AVA is now home to over 30 wineries. Santa Maria Valley Pinot Noir consistently offers full flavors of cherry, strawberry and raspberry, often accompanied by notes of spice, cola, vanilla and earth. They show impressive balance and elegance, as well as great versatility with food.
