Winemaker Notes

Layered with notes of black currant, spearmint, bacon, and smoked cedar planks, this wine seems to change almost by the second. It is plush, both in aromatics and in mouthfeel, with blueberry, violets, kirsch, and creme de cassis joining notes of tobacco and cola. A truly Californian Cabernet.

Blend: 90% Cabernet Sauvignon, 5% Cabernet Franc, 5% Carignan

    COMMENTARY: The 2017 Field Recordings Neverland Cabernet Sauvignon is an excellent example of Paso Robles can produce. TASTING NOTES: This wine is brisk, lively, and pert. Pair its aromas and flavors of blackcurrants and earth with a grilled, double-thick pork chop. (Tasted: April 26, 2019, San Francisco, CA)

Field Recordings is 40-year old winemaker Andrew Jones’ personal catalog of the people and places he values most. Spending his days as a vine nursery fieldman planning and planting vineyards for farmers all over California, Andrew is sometimes offered small lots of their best fruit on the side. Having stood in just about every vineyard on the Central Coast, he has a keen eye for diamonds in the rough: sites that are unknown or under-appreciated but hold enormous untapped potential. As friendships are made and opportunities are embraced, Andrew produces small quantities of soulful wine from these unusual, quiet vineyards.

Wonderwall focuses on Pinot Noir and Chardonnay from extreme, coastal locations. Breaking through and breaking rules. Alloy Wine Works is a collection of varietal wines packaged only in tallboy 500 ml cans. The perfect balance of inventive spirit and rural charm. Each can is pure craft wine, not to be "hip" or "relevant", but because we want to. Fiction, the original spin-off label, is a white and red wine produced from multiple vineyards and multiple varieties. Taking what the season gives us and creating a blend made for every occasion. As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the region’s number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didn’t emerge as a significant grape here until the 1970’s. But since then it has definitely made up for lost time.

Legendary winemaker and consultant Andre Tchelistcheff first recognized Paso’s potential with Cabernet Sauvignon in the early 1960’s. The calcareous soil and dramatic diurnal temperature changes of Paso’s westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region's ideal combination of soil and climate to deliver the best fruit possible.

The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.
