Aromas of grilled almonds and lime-leaf tea with notes of wax precede rich, luxurious flavors on the palate, balanced by precise minerality. The finish is particularly long and intense, and this wine can age for 10-15 years.
Spiced scallops with noodles, Turbot with hollandaise sauce, John Dory with Szechuan pepper, chicken with morels and aged Comté cheese.

The 2016 Pouilly-Fuissé Hors-Classe Tournant de Pouilly is one of the more reserved wines in the portfolio, unfurling reluctantly in the glass with notes of ripe lemons, yellow orchard fruit and pastry cream. On the palate, it's full-bodied, deep and dense, with considerable concentration and substance, balanced by the bright acids that this domaine seems so unfailingly to capture. This has considerable aging potential and will demand two or three years' patience.

This cuvée hails from one hectare of old vines in an east-facing climat near the hamlet of Pouilly. A sweet bouquet of confit citrus, yellow orchard fruit, fresh almonds and orange zest is followed by a full-bodied, vibrant palate with an almost electric sense of energy, lovely depth at the core, and a long, pure finish. This is beautifully bright, yet also clearly the product of ripe grapes.

This grows at an east-facing vineyard at the border of Pouilly, the vines averaging 60 years old, with limestone present in the deep silt and clay soils. It’s a classical Pouilly-Fuissé, ornate with smoky soil character, as if the rocky limestone were driving its intensity. The flavors last on the floral scent of beeswax, a rich match for buttery roast Dover sole.

Domaine Ferret’s estate vineyards are comprised of 18 hectares throughout the Pouilly-Fuissé appellation; 14 of these are located in the amphitheater of hills surrounding the town of Fuissé and 4 are near the Roche de Vergisson, in the north of the appellation. These terroirs and the relatively low yields, allow the production of exceptional cuvées. The vineyards are managed sustainably with an aim toward an even more rigorous respect for environmental concerns.
One of the most popular and versatile white wine grapes, Chardonnay offers a wide range of flavors and styles depending on where it is grown and how it is made. While it tends to flourish in most environments, Chardonnay from its Burgundian homeland produces some of the most remarkable and longest lived examples. California produces both oaky, buttery styles and leaner, European-inspired wines. Somm Secret—The Burgundian subregion of Chablis, while typically using older oak barrels, produces a bright style similar to the unoaked style. Anyone who doesn't like oaky Chardonnay would likely enjoy Chablis.
The source of some of the most sought-after white wines of the Mâconnais, Pouilly-Fuissé is produced exclusively from the Chardonnay grape and tends to be slightly richer in style than wines from its northern neighbor, the Côte de Beaune—mainly due to warmer weather. Wines from Pouilly-Fuissé have some versatility; they can be enjoyed young and can also often improve with a little time in the cellar. Pouilly-Fuissé wines are considered some of the best values for white Burgundy.
Similar to the Côte de Beaune, the soils of Pouilly-Fuissé are mainly limestone and clay. The appellation includes the communes of Fuissé, Solutré (which includes Pouilly), Vergisson and Chaintré. The richest Chardonnay comes from Fuissé and Solutré-Pouilly, whereas the Chardonnay at higher elevation, from Vergisson, expresses more minerality and finesse. Pairing Pouilly-Fuissé with lobster or King Crab will bring great joy not only to your palate—but also your pocketbook!
