Ther color is an intense crepuscular crimson with a hint of mauve. The nose often features rose and liquorice. The young red wine has aromas of cherry, strawberry and blackcurrant, and when matured, leather, truffle, fur, game. Notes of macerated fruits (prune) complete the picture. Muscular and vigorous, chewy and full-bodied, its structure is both well built and well-balanced and it is long in the mouth. It is most fully enjoyed after several years' laying down which rounds it out and underlines its sensuality and breeding. Its normal partners would be any meat that is at once full-flavored and virile (roast lamb, rib steak, or breast of fattened duck), as the wine firmly coats and envelops its fibrous texture. Feathered game, similarly, responds to the charm of the wild and animal aromas which the wine develops with age. Sophisticated diners will also serve it with certain fish dishes such as carp in red-wine sauce.

Tasted blind at the Burgfest 2014 tasting, the 2014 Nuits St Georges 1er Cru les Pruliers from Taupenot-Merme, closed under Diam 10, is lively and penetrating on the nose: red cherries, wild strawberry, a tang of marmalade and even a hint of rhubarb. This is quite complex and evolving, gaining more and more harmony as it opens in the bottle. The palate is medium-bodied with sappy red berry fruit, fine but quite solid tannin that lend this backbone, impressive density and a gentle grip toward the saline finish. This Nuits-Saint-Georges has bags of potential and punches above its weight, but my advice would be to cellar for 4-5 years. Tasted September 2017.

A tightly knit red, this doesn't give up the black cherry fruit easily. Earth, iron and spice flavors chime in as this builds to a mouthwatering finish. Reveals a light vegetal note on the aftertaste. Needs time. Best from 2021 through 2045. 14 cases imported.

Thin-skinned, finicky and temperamental, Pinot Noir is also one of the most rewarding grapes to grow and remains a labor of love for some of the greatest vignerons in Burgundy. Fairly adaptable but highly reflective of the environment in which it is grown, Pinot Noir prefers a cool climate and requires low yields to achieve high quality. Outside of France, outstanding examples come from in Oregon, California and throughout specific locations in wine-producing world. Somm Secret—André Tchelistcheff, California’s most influential post-Prohibition winemaker decidedly stayed away from the grape, claiming “God made Cabernet. The Devil made Pinot Noir.”
Inhabiting the bottom end of the northern half of the Côte d’Or, Nuits-St-Georges is a busy, market-driven town and home to many of Burgundy’s negociants. It is also the largest town in the Côte d’Or after Beaune and contributes "nuits" to the name of Côte de Nuits (i.e., the northern half of the Côte d’Or).
The appellation itself is divided into two parts, where in the north it directly borders Vosne-Romanée, the southerly end is the commune of Prémeaux. There are no Grands Crus in this village, though it does have a large number of Premiers Crus.
The best Nuits-St-Georges Pinot Noir are layered with cherry, plum, underbrush and sandalwood. The fruit is sweet, the wine energetic, and the finish long and lush.
