Winemaker Notes

De Loach Vineyards 1996 Cabernet Sauvignon O.F.S. displays a rich ruby color and an elegant nose of ripe plum, black cassis, chocolate, and smoke. Cassis flavors resonate on the palate, followed by layers of chocolate and cedar. This lush wine is full-bodied and sumptuous with a hint of tobacco in the finish.

De Loach Vineyards 1996 Cabernet Sauvignon O.F.S. is a wonderful wine to pair with rack of lamb or filet mignon smothered with Chanterelle mushrooms. Pate or any full flavored meat with a demi-glazed reduction sauce will go nicely. Even chocolate is excellent with this wine.

DeLoach Vineyards The Winery Winery Image

DeLoach Vineyards has been a pioneering producer of Pinot Noir, Chardonnay and Zinfandel in Sonoma’s Russian River Valley since 1975. DeLoach seeks to produce exceptional wines that spotlight the singular personality of the Russian River Valley, with its rare and bountiful convergence of the sea, the soil and the stars. The Boisset family of Burgundy has stewarded winegrowing and winemaking at DeLoach since 2003, bringing the techniques and approaches of Burgundy to winemaking in the Russian River Valley, which they believed to be California’s most expressive terroir for cultivating Pinot Noir and Chardonnay. Under Boisset, DeLoach has grown its small-lot vineyard designate wine program, become a certified organic and Biodynamic estate vineyard, and implemented traditional Burgundian winemaking techniques such as open-top wood fermentors, native yeast fermentations, and hand punch-downs. Wine & Spirits magazine has named DeLoach Vineyards a Top 100 Winery twelve times.

While Sonoma County is acclaimed—and rightfully so—for its Chardonnays, Pinot Noirs, and Zinfandels, it also produces exceptional Cabernet Sauvignon. Of the region’s 18 American Viticultural Areas, only a handful produce top-notch Cabernet Sauvignon. These appellations include Alexander Valley, Knights Valley, Sonoma Valley and Dry Creek Valley. Sonoma Cabernet Sauvignons made in these appellations can offer a complex array of aromas and flavors. Fruit notes such as blackberry, blackcurrant, cassis, black cherry and raspberry often are accompanied by hints of graphite, dusty earth, cigar box, toast and vanilla. The varietal has a rich history in Sonoma, and some of these Cabernet Sauvignons and Cabernet-based blends rival the best from Napa Valley.
