Winemaker Notes

Thee 2014 DAOU Estate Soul of a Lion shows beautiful depth of color. This inky purple wine is loaded with aromas of plums, crème de cassis, garrigue and exotic flowers. On the palate, the wine is layered with velvety tannins and shows a unique elegance while being accompanied by extreme intensity and power. Nuanced vanilla bean, toasted spice, graphite, licorice and lead pencil shaving like aromas round out the spectrum flavors. Insanely concentrated, it has a gorgeous harmonious length that extends into a seamless finish which lingers on the senses. Armed with a great tannin structure, it will certainly benefit from laying down for several years.

Blend: 83% Cabernet Sauvignon, 14% Cabernet Franc, 3% Petit Verdot

A sultry shade of dark purple, this luxury bottling by the Daou brothers shows freshly smashed black currant, gravelly minerality, black pepper, espresso and shaved chocolate on the nose. The palate is black to the core, from blueberry to dark chocolate to lava rocks, with strong yet polished tannins and wel-balanced acidity. Decant now or drink 2020–2035.

This wine is a blend of 83% Cabernet Sauvignon, 14% Cabernet Franc and 3% Petit Verdot. Medium to deep garnet-purple colored, the 2014 Soul Of A Lion has a gorgeous red and black currants nose with underlying earth, cinnamon stick, cigar box, cloves and sautéed herbs suggestions. Full-bodied, rich, concentrated and yet possessing great finesse, it possesses beautiful, fine-grained tannins and a lively backbone, finishing with persistent perfumed fruit layers.

A sturdy, dense, layered style, built for short-term cellaring. Remarkable flavor doors open as this unfolds, with red berry, licorice, herb, underbrush and jazzy, toasty oak. Though enjoyable now, this will be better in a couple of years. Built for the mid-range haul. Cabernet Sauvignon. Best from 2020 through 2035.

DAOU Family Estates Walk with DAOU Vineyards Winery Video

Brothers Georges Daou and Daniel Daou set forth across the globe to find an unrivaled terroir for producing Cabernet Sauvignon, a quest that led them to a place of foretold greatness: DAOU Mountain in the Adelaida District of Paso Robles. DAOU Family Estates is a family owned and operated winery committed to producing collectible, world-class wine to rival the most respected appellations. Situated on a 212-acre hilltop estate in the Adelaida District of Paso Robles, this remarkable mountain was once described by André Tchelistcheff, legendary winemaking authority, as "a jewel of ecological elements."

DAOU Mountain stands alone at an elevation of 2,200 feet, rising from the heart of the Adelaida District in the rugged coastal range west of Paso Robles. The steep slopes here reach up to 56 percent, with uniform exposure to the elements across the estate. It is a terroir of power, purity, and symmetry with every natural asset necessary to pursue the perfect Cabernet Sauvignon—including calcareous clay soils that emulate Bordeaux’s Right Bank and a climate that mirrors St. Helena.

One of the world’s most classic and popular styles of red wine, Bordeaux-inspired blends have spread from their homeland in France to nearly every corner of the New World. Typically based on either Cabernet Sauvignon or Merlot and supported by Cabernet Franc, Malbec and Petit Verdot, the best of these are densely hued, fragrant, full of fruit and boast a structure that begs for cellar time. Somm Secret—Blends from Bordeaux are generally earthier compared to those from the New World, which tend to be fruit-dominant.

Covering the Santa Lucia Range in the northwestern portion of the greater Paso Robles appellation, the Adelaida District AVA reaches from 900 feet to over 2,000 feet in elevation. The appellation does well with Rhone and Bordeaux varieties as well as Zinfandel.
