The 2013 DAOU Estate Soul of a Lion shows beautiful depth of color. The black velvety core leads to aromas of early spring violets, crushed blueberries, and shaved chocolate. The palate is seductively balanced by the unique tartness of black raspberries and concentrated oral complexity of crème de cassis. Nuanced vanilla bean, cedar forest floor, and spiced tobacco round out the spectrum flavors. Integrated tannins, bright acidity, and moderate alcohol naturally extend into a seamless finish that lingers on the senses. Made from maturing vines, this wine showcases the best of DAOU Mountain terroir.

    Deep ruby in color, the 2013 Soul Of A Lion is still a baby, loaded with cassis and accents of graphite, iodine and iron—this has barely budged in the last eight years! The palate is full-bodied with a fine, grainy frame, mineral-laced flavors and a very long finish. It's an expertly crafted Cabernet Sauvignon that inspires glee with its incredible youth, but it will require plenty more time in bottle to show everything it's got.

    Can a wine roar? The full-bodied 2013 Daou Soul of The Lion—a proprietary red wine of Bordeaux varieties—comes onto the palate with tremendous power and strength, yet recoils at the end to show a touch of elegance. Black fruit, earth and oak come to the fore and make this a perfect red wine with a well-marbled ribeye of beef. Just beginning to drink well. (Tasted: May 9, 2016, San Francisco, CA)

    Loads of plum and blackberry character with plenty of vanilla and oak wrapping around the fruit. Full-bodied with round, chewy tannins and lots of fruit at the end. A little old-school and rich, but still shows freshness for a big wine. 82% cabernet sauvignon, 10% cabernet franc and 8% petit verdot. Drink now.

Situated on a 212-acre hilltop estate in the Adelaida District of Paso Robles, this remarkable mountain was once described by André Tchelistcheff, legendary winemaking authority, as "a jewel of ecological elements."

DAOU Mountain stands alone at an elevation of 2,200 feet, rising from the heart of the Adelaida District in the rugged coastal range west of Paso Robles. The steep slopes here reach up to 56 percent, with uniform exposure to the elements across the estate. It is a terroir of power, purity, and symmetry with every natural asset necessary to pursue the perfect Cabernet Sauvignon—including calcareous clay soils that emulate Bordeaux’s Right Bank and a climate that mirrors St. Helena.

One of the world’s most classic and popular styles of red wine, Bordeaux-inspired blends have spread from their homeland in France to nearly every corner of the New World. Typically based on either Cabernet Sauvignon or Merlot and supported by Cabernet Franc, Malbec and Petit Verdot, the best of these are densely hued, fragrant, full of fruit and boast a structure that begs for cellar time. Somm Secret—Blends from Bordeaux are generally earthier compared to those from the New World, which tend to be fruit-dominant.

Covering the Santa Lucia Range in the northwestern portion of the greater Paso Robles appellation, the Adelaida District AVA reaches from 900 feet to over 2,000 feet in elevation. The appellation does well with Rhone and Bordeaux varieties as well as Zinfandel.
