Winemaker Notes

The 2018 DAOU Reserve Cabernet Sauvignon is a shining example of world-class Cabernet Sauvignon from Paso Robles. This wine’s magnificent nose is quintessential Cabernet Sauvignon, offering scents of dark chocolate, licorice, blackberries and cured meats with a touch of cedar. The palate delivers an explosion of fresh, dark berry fruits. Flavors of blackberry, juicy black cherry, cassis and cocoa are underscored by lovely accents of blueberry and raspberry. A silky palate is nicely integrated with hints of toasty oak, graphite, mineral and forest floor. Ripe fruits and exotic spices linger on a generous, full-bodied finish that promises excellent age-worthiness.

The 2018 Cabernet Sauvignon Reserve has a deep ruby-purple color and luscious creme de cassis, violet perfume, cast-iron pan and notes of dark, exotic spices. The medium-bodied palate is fresh, silken and lifted, its lively flavors and sweet new oak spices dancing on the extended finish. This was made with 100% free-run juice. It is blended with 20% Petit Verdot, 2% Merlot and 1% Cabernet Franc and was aged 18 months in 50% new French oak. Rating : 93+

Not yet bottled, the 2018 Cabernet Sauvignon Reserve is 78% Cabernet Sauvignon and 22% Petite Verdot that will also spend 20 months in 50% new oak. Blueberries, blackberries, tobacco leaf, and spicy notes all flow to a medium to full-bodied, fresh, lively effort that shines for its terrific purity and balance.

A little porty on the nose with dried berries and spice that follow through to a full body with medium firm tannins that are dusty in texture. Flavorful finish. Dry earth to the fruit at the end. Drink now.

DAOU Family Estates Walk with DAOU Vineyards Winery Video

Brothers Georges Daou and Daniel Daou set forth across the globe to find an unrivaled terroir for producing Cabernet Sauvignon, a quest that led them to a place of foretold greatness: DAOU Mountain in the Adelaida District of Paso Robles. DAOU Family Estates is a family owned and operated winery committed to producing collectible, world-class wine to rival the most respected appellations. Situated on a 212-acre hilltop estate in the Adelaida District of Paso Robles, this remarkable mountain was once described by André Tchelistcheff, legendary winemaking authority, as "a jewel of ecological elements."

DAOU Mountain stands alone at an elevation of 2,200 feet, rising from the heart of the Adelaida District in the rugged coastal range west of Paso Robles. The steep slopes here reach up to 56 percent, with uniform exposure to the elements across the estate. It is a terroir of power, purity, and symmetry with every natural asset necessary to pursue the perfect Cabernet Sauvignon—including calcareous clay soils that emulate Bordeaux’s Right Bank and a climate that mirrors St. Helena.

As Paso Robles, California has soared in number of wineries and gained in popularity, Cabernet Sauvignon has firmly taken root as the region’s number one varietal. Alone, it accounts for just over 40% of plantings and is grown throughout both the western and eastern sides of the appellation. Though viticulture here dates back to the 18th century, Cabernet Sauvignon didn’t emerge as a significant grape here until the 1970’s. But since then it has definitely made up for lost time.

Legendary winemaker and consultant Andre Tchelistcheff first recognized Paso’s potential with Cabernet Sauvignon in the early 1960’s. The calcareous soil and dramatic diurnal temperature changes of Paso’s westside particularly intrigued him. Today modern winemaking techniques and focused experimentation with various clones, rootstocks and vineyard strategies optimize the region's ideal combination of soil and climate to deliver the best fruit possible.

The results are evident in the glass. Paso Robles Cabernet Sauvignon can be mesmerizing, with rich aromas and flavors of blackberry, cassis, black cherry, graphite, toasty oak, vanilla and spice. The structure, balance and unbridled opulence of these wines impress from first sip to last. Not surprisingly, Paso Robles Cabernet Sauvignons have steadily grown in reputation, not just in the U.S., but around the world.
