Somm Note

Winemaker Notes

Blackberry, cassis, plum and currant aromas greet the nose, surrounded by black olives, anise, leather, and cigar box. Notes of graphite and crushed stone mingle with just a hint of cool mint. Robust and full bodied, an undercurrent of restrained power is palpable just below the surface at the core of this wine. Firm, fine grained tannins provide ample backbone for the layers of boysenberry, black cherry, licorice and dried herb flavors. Meaty and fleshy while retaining an overall elegance, it finishes with authority and finesse.

Tasted from barrel, the 2016 Cabernet Sauvignon Estate reveals notes of cassis, blackberries, licorice and pencil shavings. On the palate, it's full-bodied, ample and powerful, amply endowed with fine structuring tannins and concluding with a long, dry finish. After the Merlot-, Cabernet Franc- and Malbec-based cuvées, this represents a return to the authority of Cabernet Sauvignon.Rating:92-94

This is a great way to experience the richness of Daou without hurting the bank account too much. Hedonistic aromas of candied black cherry, caramel, vanilla cake and cola lead into a rich and powerful palate that's soft in texture and lively with exotic plum and black currant flavors.

Just bottled, the 2016 Cabernet Sauvignon is another outstanding wine. Black currants, licorice, charcoal and lead pencil notes all flow to a full-bodied, silky, polished and elegant Cabernet that's a delicious drink. Like the 2015, it was aged 11 months in 60% new French oak.

A well-built Cabernet, the 2016 Daou strikes an excellent balance between powerful ripeness and stylish palate presence. The wine's tempered palate presence of black fruit and savory oak position it as a perfect choice with mixed grilled meats. (Tasted: September 7, 2017, San Francisco, CA)

DAOU Family Estates Walk with DAOU Vineyards Winery Video

Brothers Georges Daou and Daniel Daou set forth across the globe to find an unrivaled terroir for producing Cabernet Sauvignon, a quest that led them to a place of foretold greatness: DAOU Mountain in the Adelaida District of Paso Robles. DAOU Family Estates is a family owned and operated winery committed to producing collectible, world-class wine to rival the most respected appellations. Situated on a 212-acre hilltop estate in the Adelaida District of Paso Robles, this remarkable mountain was once described by André Tchelistcheff, legendary winemaking authority, as "a jewel of ecological elements."

DAOU Mountain stands alone at an elevation of 2,200 feet, rising from the heart of the Adelaida District in the rugged coastal range west of Paso Robles. The steep slopes here reach up to 56 percent, with uniform exposure to the elements across the estate. It is a terroir of power, purity, and symmetry with every natural asset necessary to pursue the perfect Cabernet Sauvignon—including calcareous clay soils that emulate Bordeaux’s Right Bank and a climate that mirrors St. Helena.
