This wine, with its rich black ruby color, exudes complex aromas of dried cranberries, ripe cherries, nutmeg, roastedcoffee, and dusty potpourri. It fills the mouth with firm, dense, luscious fruit and fine, silky tannins. WinemakerFrancoise Peschon notes: This wine is delicious, smooth and seamless with layered flavors of cassis, dried plums,pomegranate, spicy cinnamon, and cedar that coat the palate, ending in a long spicy finish touched with lead pencil.While bursting with fruit, it is impressive in its elegance, balance and harmony. It should age gracefully for 20 ormore years.

    The 1997 Cabernet Sauvignon Eisele Vineyard, is a beauty. The healthy ruby/purple color is followed by classic, unevolved but promising aromas of minerals, cedar, smoke, and black currants. The wine is medium to full-bodied, with admirable purity, a sweet, lush mid-palate, and ripe tannin in the finish. The top-notch 1997 is a classic, restrained.

    Full ruby-red. Expressive nose combines black raspberry, currant, black cherry, chocolate, tobacco and sandalwood. Lush and sweet but fresh, with a firm edge of acidity giving shape to the flavors. Big and mouthfilling but not at all heavy. The tannins are suave and fine. A bit dominated by the oak today. This wine is virtually always in an awkward stage about six months after the bottling, says Bart Araujo, although I recall that the '96 was atypically showy a year ago.

Since 1971, some of California's most ageworthy and intensely-flavored Cabernet Sauvignons have been made from grapes grown at the Eisele Vineyard, located on a benchland near the northern end of Napa Valley, just east of Calistoga. Protected by the Palisades Mountains to the north and cooled by westerly breezes from the Chalk Hill Gap, this 38-acre vineyard is planted on warm cobbly soils that produce a low-yielding crop of exceptionally concentrated fruit. Bart and Daphne Araujo acquired the Eisele Vineyard in 1990, and committed to producing only wines of the highest caliber and distinction. Araujo Estate produces 4 wines each vintage: Cabernet Sauvignon Eisele Vineyard, Altagracia, Syrah Eisele Vineyard and Sauvignon Blanc Eisele Vineyard.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

One of Napa Valley’s oldest wine growing subregions but last to gain appellation status, Calistoga occupies the northernmost section of the valley. Beginning at the foot of Mount St. Helena, its vineyards stretch over steep canyons and roll out onto the valley floor. The soils in Calistoga are volcanic, which means they are heavy in minerals, low in organic matter and allow good drainage for vine roots, creating less green growth and more concentration of flavor within the grape berries.

Summer days are very hot but most nights cool down with moist ocean breezes sneaking in over the Mayacamas Mountains or from Knights Valley to its northwest.

Cabernet Sauvignon is the area’s star variety with Zinfandel coming in a strong second, though the latter commands far less price per tonnage so continues to be outshined by Cabernet in vineyard acreage, save for some important exceptions.
