Winemaker Notes

Cinq Cépages ("Five Varieties") is a Bordeaux-style blend consisting of Cabernet Sauvignon (77%), Merlot (9%), Cabernet Franc (7%), Malbec (4%), and Petit Verdot (3%). Each component is aged separately for two years in small French oak barrels (47% new) before blending. Once the wine is assembled, it spends six months in the bottle before release.

"Inviting aromas of boysenberry and violet define the nose of this flagship Sonoma CountyCabernet Sauvignon. A rich and dense entry begins with layers of black raspberry, mocha and hints of blueberry. The palate offers a graceful balance between fruit extract and fine-grainedtannins. This deep, concentrated wine has a classic Cinq Cépages structure with beautiful oakintegration and a lushness throughout that leads to a lingering finish."
- Margo Van Staaveren, Winemaker

The 2004 Cabernet Sauvignon Cinq Cepages is a blend of 77% Cabernet Sauvignon, 9% Merlot, 7% Cabernet Franc and the rest Malbec and Petit Verdot. A big sweet kiss of incense, bay leaf, white chocolate, black cherries, black currants and a touch of smoke jump from the glass of this opaque purple-colored wine. Rich and concentrated, this comes across as one of the best vintages I have tasted of Cinq Cepages.

Fans of CC will find a wine with the balance of previous vintages. It refuses to be a fruit bomb, but offers a wealth of sumptuous blackberry and cherry liqueur flavors that pull back at the last moment under a blanket of youthful tannins.

Underneath the smoke of this wine's meaty black tannin there's a high-toned red fruit character, hinting at earthy roots and eucalyptus. A lamb chop will absorb some of the tannin and bring out the wine's elegance.
