All of Stag's Leap Wine Cellars' 2007 red wines are remarkably fruit-forward and accessible in their youth, yet remain true to Stag's Leap Wine Cellars house style: refined, elegant and suggesting a long life in the cellar. The 2007 FAY shows the typical bright cherry aromatic signature of the vineyard, as well as barrel spice, sandalwood, red plum and subtle sous bois (forest floor) aromas. The palate is fresh and energetic, with perfectly ripened red and black cherry and plum fruit. Gentle notes of spice, caramel and marshmallow cream sit in the background, adding nuance without masking the fruit character. The wine is solidly structured yet supple, closing with refreshing natural acidity. Enjoy it with duck breast with cherry sauce or black olive-stuffed roasted squab.

    This is a very strongly flavored Cabernet, most notable for the intensity of its blackberry, cherry and raspberry fruit. It’s almost sweet, an impression furthered by the caramel of toasted oak, although in reality the wine is fully and appropriately dry. Delicious and flashy, it should evolve in the bottle over the next dozen years.

    The 2007 Cabernet Sauvignon Fay Vineyard Estate is an outstanding effort made from 100% Cabernet Sauvignon from a 67-acre estate vineyard in Stags Leap. Its deep ruby/plum color is followed by sweet aromas of plums, Allspice, licorice, black currants, cherries and flowers. Medium-bodied and elegant with a nice texture and silky tannins, it should drink well for 10-12 years.

History of Stag’s Leap Wine Cellars

Stag’s Leap Wine Cellars was founded in 1970 with the purchase of a 40 acre property in the now famed Stag’s Leap District AVA in Napa Valley. The winery brought international recognition to California winemaking and the Napa Valley region when their 1973 S.L.V. Cabernet Sauvignon won the 1976 Paris Tasting, also known as the "Judgement of Paris."

Within the Napa Valley lie many smaller sub-AVAs that express specific characteristics based on situation, slope and soil—as a perfect example, Rutherford’s famous dust or Stags Leap District's tart cherry flavors.
