Winemaker Notes

Brilliant pale straw-yellow colour with slight green hues. This has a full and voluminous bouquet with stylishly restrained pungent passionfruit aromas with a concentrated and deep core, revealing rich, sweet lime and red capsicum nuances in the glass. Dry to taste and medium-bodied, tightly bound flavours of passionfruit, tropical fruits are supported by a very fine, textural thread and ripe, crisp acidity. The palate has richness allied to focussed intensity, unfolding waves of passionfruit, herbs and spices, the flavours building in presence and mouthfeel. The palate flows smoothly with slippery acidity carrying the wine to a mouthwatering, dry and very long and sustained finish.

    A bright, spicy sauvignon, this is relatively closed off in the aroma, showing only a youthful green-scallion scent. Then it opens up in the finish, lasting on sweet notes of passion fruit and a smoky earthiness. Decant to serve with roasted halibut.

The first Palliser Estate vines were planted more than 20 years ago, in 1984. Today, Palliser wines are served in some of the world's finest restaurants and enjoyed by thousands of people every day.

Winemaker Allan Johnson produces consistently superb wines, which reflect Palliser's prime vineyard sites in Martinborough. Their two brands – Palliser Estate and Pencarrow – offer a comprehensive portfolio of wines, including Chardonnay, Methode Traditionelle, Noble Chardonnay, Pinot Noir, Riesling, Sauvignon Blanc and Pinot Gris.

Capable of a vast array of styles, Sauvignon Blanc is a crisp, refreshing variety that equally reflects both terroir and varietal character. Though it can vary depending on where it is grown, a couple of commonalities always exist—namely, zesty acidity and intense aromatics. This variety is of French provenance. Somm Secret—Along with Cabernet Franc, Sauvignon Blanc is a proud parent of Cabernet Sauvignon. That green bell pepper aroma that all three varieties share is no coincidence—it comes from a high concentration of pyrazines (herbaceous aromatic compounds) inherent to each member of the family.

Part of the Wairarapa region in the southern end of the country’s North Island, Martinborough is a bucolic appellation full of artisan, lifestyle wine producers. Above all else, their goals are to tend vineyards for low yields and create wines of supreme quality. Pinot noir is the main grape variety here, occupying over half of the land under vine.

Comparing topography, climate and soils, the region is nearly identical to Marlborough except that it produces top quality reds on the regular.
