This is Glen Carlou's signature red wine. Rich ruby red in color this wine has aromas of red cherry with hints of young black fruits and oak. Flavors of black cured cherries, with layers of dark chocolate and tobacco with spice. The tannins are beautifully proportioned with mild toasted almond.

The grapes are picked at the optimal ripeness level: harvesting is carried out by hand and the grapes are placed in trays to be transported back to the winery. At Chauvin, the wine is made in the traditional way, while also making the most of what modernity has to offer: nothing is done systematically and each year every effort is focused on adapting the techniques used to the qualities of that year's grapes.

About Chateau Chauvin:

The vineyard is located to the north-east of Saint-Emilion, near Pomorol, half-way between Cheval-Blanc and La Cote Roi. The 37 acres are planted with 75% Merlot, 20% Cabernent Franc and 5% Cabernet Sauvignon. The soil of the estate is sandy while the subsoil is characterised by the presence of clay and iron.

We have been in partnership with BIOVITIS since 1994. Half of the vineyard is ploughed mechanically, while the other half is cultivated with grass-cover between the rows. Green harvesting is carried out throughout the vegetation cycle, to bring yields to 35 to 40 Hl/Ha.

At Chauvin the wine is made in the traditional way, while also making the most of what modernity has to offer: nothing is done systematically and each year every effort is focused on adapting the techniques to the qualities of that year's grapes.

Acrobat Pinot Gris is an extremely approachable wine and a versatile food companion. It has been consistently praised for it's value, delivering great quality for a modest price.

The color is pale straw with golden highlights. The nose finds fresh pear and honeydew melon with flavors of mandarin orange, lemon, kiwi, pear and spice. A round entry on the palate with nice balance between acidity and residual sugar. A clean, refreshing finish.

A bright yellow straw in color, the Yalumba Y Series Viognier 2010 exhibits an alluring mix of honeysuckle, candied ginger and glace´ pineapple aromas, which are typical of this exotic variety. In the mouth the palate has flavours of fresh pineapple and dried figs. It is finely balanced with silky texture from wild fermentation and lees aging. A wine of poise, which is delicious with zucchini flowers stuffed with a goat's cheese, pine nut and baby spinach mousse. Suitable for vegans and vegetarians.

The Cotes du Rhone Villages Cuvee du Vatican has always been considered as the "younger brother" of the famous Chateauneuf du Pape. It is well worth questioning this assuption, however. This is a wine that has long since proved its credentials and which continues to astound us by its vitality. A true vintage wine, it reveals its attractions for the greatest pleasure of one and all. This endearing wine will always be present at table wherever good living and good humor are the rule.

Jean-Marc Diffonty is the 4th generation at the domain and has been responsible, since his father Félician Diffonty left the charge in 1993. Félician Diffonty was the mayor of Chateauneuf du Pape 1965-1995 and it was him who in 1958 named the domaine Cuvée du Vatican - with blessings by the pope! In 1996 Jean Marc was made president of the Young Winemakers of Châteauneuf du Pape.

Winemaker's Notes:

The Phoenix name recognizes the first winemaking company purchased by Douglas Tolley in South Australia in 1888, the 'The Phoenix Winemaking and Distilling Company.' The nose consists of violets, black currant leaf, ripe wild berry and integrated spice of the Cabernet grape. Mulberry and blackberry are the dominant fruit flavors enhanced by a tight palate with silky grape tannins and elegant complex cedar oak, so typical of Penley Style. A very generous mid palate with a hints of licorice and chocolate lingers on the finish.

Established in 1988, by Kym Tolley, a direct descendant of the famous Penfold and Tolley winemaking families – the name Penley is an amalgam of the first three and last three letters from each title.

Tolley has over 25 years of winemaking experience, including being involved in the making of many vintages of the famous Penfolds Grange. The estate is located in the heart of Coonawarra, with the vines planted in the famed "terra rossa" soils – bright red top-soils overlaying soft free-draining limestone.

Bright red fruits led by early summer strawberry, fresh bing cherries mix with wild herbs and a hint of Mourvedre. Unlike many Grenaches, this wine is light on its feet, mixing a heady nose, with both fruit and minerals in the body. This is an El Dorado blend of Grenache from Fenaughty, Swansboro, Goldbud and Lightner vineyards and will simply shine on this summer's table.
