Winemaker's Notes:

The 2011 Cabernet Sauvignon offers aromas of red fruit, sweet spice and a touch of fresh mint. It is full and soft with layers of red currant and cassis with notes of clove and black pepper. The wine finishes with finely grained tannins that add structure and length. Made with 100% Cabernet Sauvignon.

Traditional pairings such as steak, grilled or roasted beef dishes, wild game, chocolate and cheeses are perfect with this wine.

About Tilia:

Named after the Tilia (Linden) tree commonly found throughout Argentina’s wine country, Tilia wines possess true varietal character and embody the rural Mendozean lifestyle. For years vineyard workers have used the flowers of the Tilia to make an herbal tea for enjoyment after a hard day’s work. The name Tilia is chosen in honor of this wine country tradition.

The Tilia wines are made at Bodegas Esmeralda, a Catena family winery in the Eastern region of Mendoza that is dedicated to making value wines for the Argentine domestic market. Tilia wines offer a unique combination of fruit sourced from the traditional Eastern region and the dynamic Southern region of Mendoza. The Eastern region of Mendoza enjoys warm, sunny days and cool desert nights. The grapes have very ripe, rich fruit flavors and excellent mid-palate depth and concentration. Bright sunshine and low temperatures of the Southern region lend a cool freshness. The fruit from this area shows clean acid balance and soft, supple tannins.

Tilia is dedicated to responsible use of the environment. The winemaking and viticultural team actively engage in many practices and programs throughout the community to implement sustainability. Water conservation and reuse, minimal use of pesticides and organic fertilization are several examples of the team’s dedication. Furthermore, the entire Tilia viticultural team attends regular sustainability training sessions at the National University of Cuyo and National Agricultural Research Institute. They take this training into the field to share and implement with their grower partners.

Tilia Malbec has a dark, blackish purple color. The nose offers ripe black fruits, black pepper spice and floral notes. The mouthfeel is full yet soft and supple, with black raspberry and currant flavors mingled with notes of sweet spice and a touch of leather. The finish is long and persistent with soft, sweet tannins.

Winemaker's Notes:

Vibrant, ripe and generous - a drop that is big on flavor and deep in color with an intense aroma. It has delicious concentrated cherry and blackberry flavors with hints of classic cracked pepper spice. These flavors are complimented by vanilla softness and well-structured tannins.

A perfect accompaniment to this wine would be rich rare char-grilled beef and asparagus, or a rich confit de canard to bring out its juicy palate.

About Yellow Tail:

It all began way back in 1820s when the first Casellas began crafting wine in Italy. Over a century later, in 1951, Filippo Casella and his wife Maria decided to leave their homeland to pursue their hopes and dreams of a better life in Australia. Recognizing the potential of his new surroundings, Filippo purchased a farm in the small town of Yenda, New South Wales, and did what came naturally. He began selling grapes to local wineries, and by 1969 decided it was time to put his own winemaking skills to use and the Casella winery was born.

Filippo's son, John, entered the family business in 1994 and embarked on an ambitious expansion to build a new winery with a vision of blending old world heritage with new world technology. Today, Casella Wines, including Yellow Tail, is run by Filippo's three sons - John, Managing Director and Winemaker; Joe, Australian Sales Director; and Marcello, Director and Vineyard Manager. Filippo's grandchildren - Phillip and Rachelle - are the sixth generation to join the business.
