Winemaker's Notes:

ONEHOPE Cabernet Sauvignon is hand-crafted and made from a blend of grapes sourced from select vineyards throughout Napa Valley, Sonoma County, and California's Central Coast in partnership with Rob Mondavi Jr. The dark, ruby red Cabernet is a pleasure for the senses with the aromas of lush black cherry, cassis and a hint of tobacco. Aged in American and French oak, its complex layers of spice are balanced by soft tannins making it the perfect wine to pair with roasted and grilled meats such as lamb, prime rib, or porterhouse steak.

ONEHOPE donates 50% of profits generated from the sale of every bottle of Cabernet Sauvignon to benefit ACT Today! to help autistic children achieve their highest potential. The partnership between ONEHOPE and ACT Today! helps provide funding and support for families who cannot afford specialized care for their autistic children. Deep garnet red, with aromas of black cherry. This wine is fleshy, well-structured with the warm and savage soils of the Roussillon area.

Pair with a nice cut of beef or Mediterranean food.

Additional wines from Bila-Haut by Michel Chapoutier:

About Bila-Haut by Michel Chapoutier:

Domaine Bila-Haut is owned by the well known Rhone Valley Oenologist, Michel Chapoutier. The name refers to an old farm villa which was built high into the mountain slopes , among some old vineyards. The Domaine comprises 75 hectares of land cultivated under bio-dynamic farming techniques and is characterized by steep pebbly slopes rising from almost 150 meters above sea level. The soil has 3 components…Schiste, Gneiss and Clay, and the Grape varieties are Grenache, Carignan, and of course Syrah. The cool winters and very hot summers combined with little rain, and the drying Mistral breeze during the growing season is perfection for these varietals…in some respects better than in the Rhone Valley. The Domaine is located in the commune of Latour-de-France…just about as close as you can be to Spain, but still be located in France, with a great deal of history related to the Nights Templar, and the Cathar movement, hence the T in the title of the Domaine shaped like the Nights Templar Cross. The wines exhibit the distinctive pepper and spice of Syrah, but are bigger and rounder in the mouth, with great complexity coming from the Carignan and Grenache. Here is A Rhone producer getting the best out of the Terroir in Lanquedoc… a superb combination! And one of the best Wine Makers in France.

This wine is a bright, ruby red color, with brick red hints. The aromas are intense and complex, with vanilla, spiced and aromatic herbs perfectly blended with mature red fruit. The mouth shows very balanced, fine, elegant and rounded structure. It has a long, very pleasing finish.

Ideal for all types of grilled and roasted meats. It also matches well with strong fish and all kind of cured cheeses. Tasty with chocolate desserts and puddings.

The color is a brilliant red. Aromas of red-berried fruit, and violets are present. On the palate excellent balance, freshness and pleasantness accompany notes of soft fruit and cherry, hints of violet. Iideal with pasta and pizza, it is recommended as an everyday wine.
My Notes:

About Fattoria Viticcio:

Founded in 1960 by Lucio and Franca Landini, the Viticcio Estate still stands above the picturesque town of Greve, in the heart of the Chianti Classico region. Their focus is to produce high-quality wines worthy of an international clientele while at the same time respecting the traditions and viticulture of the region. This focus remains the same today under the direction of the second generation, Alessandro Landini.

The estate comprises more than 30 hectares of vines, all of which are farmed organically. Additionally, seven of those hectares are farmed biodynamically. Alessandro strongly believes that in order to produce high-quality wines you must first respect the land in which the vines are planted. To this end he uses no pesticides in his vineyards and fertilizes by planting things such as fava beans and barley between the rows of vines, allowing them to flower, and then plowing them back into the soil to add important nutrients. A handful of wines see some time in the smaller barriques, but the large majority is aged in large botti. The wines of Viticcio represent an important combination of traditional, time-honored techniques with modern-day technology and respect for the environment.

My Notes:

About Chateau Hyot:

Chateau Hyot showcases the masterful skill of winemaker Amelie Aubert and consultant Michel Rolland. The wine is a Merlot-based blend, from 40 year-old vines, with Cabernet Franc bringing sophisticated aromas and silky tannins, and a dose of Cabernet Sauvignon for a structural backbone.

A deep respect for the vine is the driving force behind Amelie Aubert's philosophy and approach to making wine. "Quality is not possible with quantity," she explains, "and I want my wine to capture the essence of this fantastic terroir."

Winemaker's Notes:

Beautiful deep purple color. The nose is like walking into a gentlemen's poker parlor: aromas of cigar, leather, and smoked meat fill the nose with hints of toasty oak, forest floor and baking spice. Well-structured tannins support big fruit flavors of blackberry jam, black spiced cherries, ground black pepper and just a hint of rhubarb. Nice, lingering finish. L3—lush, long and loveable.

Pairs well with grilled or smoked meats such as beef, pork and lamb, and dishes prepared with mild cheese or wild mushrooms.

Additional wines from Luca:

About Luca:

Laura Catena is a fourth generation winemaker who grew up in a traditional Argentine-Italian winemaking family in Mendoza. Laura splits her time between Mendoza and San Francisco, California, where she is an emergency physician, university professor and occasional tango dancer. Laura had the vision of creating a new breed of Argentine wines: small quantities, artisan quality, and true to their individual terroirs. A pioneer of small-grower relations in Mendoza, Laura's incredible, limited production wines come from some of Argentina's best fruit from low-yield, high-elevation, family-owned vineyards. The wines are named after her children - Luca, Dante and Nicola - and the background of the label is the McDermott coat of arms of her American husband, Daniel McDermott.

Winemaker's Notes:

A spicy Shiraz from the vineyards of Central Victoria brightens with a boost of Viognier for aroma and balance, as often practiced in France's most highly regarded appellation of the Northern Rhone Valley, Côte Rôtie. The grapes grown in this Austrialian vineyard where planted on 19th century French rootstocks, another nod to the French tradition & influence in this new world wine. This wine is a collaborative effort between two renowned wine families; Chapoutier from the Rhône Valley in France, and Terlato family of Napa Valley in California.
My Notes:

Additional wines from Domaine Terlato & Chapoutier:

About Domaine Terlato & Chapoutier:

Domaine Terlato & Chapoutier combines the vision of Anthony J. Terlato, the founder of luxury importer and marketer Terlato Wines International, and Michel Chapoutier, the esteemed Rhône grower and vintner whose compelling wines have been exalted by critics around the world. The origin of the Terlato & Chapoutier partnership in Australia dates back to 1998, when Chapoutier enthusiastically told Terlato about a top vineyard site in Australia. Located on an eastern-facing slope on the southern edge of the Pyrenees Hills in western Central Victoria, the region’s unique iron-rich and schist soils could produce “great wines,” according to Chapoutier, and the resulting single-vineyard Shiraz from the "Malakoff" vineyard and Shiraz-Viognier blend have been highly lauded since their release in 2006.

Winemaker's Notes:

#60 Wine Spectator Top 100 of 2011

Palazzo della Torre has a particular structure and aromatic qualities, combined with an elegant and harmonious personality. A complex wine with pleasant raisined nuances and a lengthy, lingering finish. This wine has an aging potential of 8-10 years.

It pairs well with a wide range of Italian cuisine, such as pasta and risottos made with full-flavoured, spicy sauces and white and red meats, roasted or grilled. Also perfect with cold cuts and mediummatured cheeses.

My Notes:

Additional wines from Allegrini:

About Allegrini:

The estate is based in Fumane di Valpolicella, just north of Verona in northeastern Italy. Valpolicella, or "valley of many cellars" is an area crossed from north to south by a series of hills, which in succession form three parallel valleys. These valleys are crossed by steep-sided, narrow river beds which remain dry except during spring thaws or autumn rains.

The Allegrini family has been handing down grape growing and wine producing traditions over many generations, playing a major role in the Valpolicella Classico area for many centuries. Giovanni Allegrini was the founder of the new generation. He was extremely proud to be part of the Valpolicella, and dedicated his many resources and energies to this land. He was among the first in questioning local viticultural techniques, revolutionizing accepted practices, and speaking clearly about quality. He was able to combine the science of enology with strict grape selection, and between 1960 and 1970, made some of the Valpolicella's best wines.

Allegrini's winemaking philosophy is largely based on the concept of "cru" production: a single vineyard dedicated to the production of local varieties destined to become a single wine. These crus have been a success worldwide: The Palazzo della Torre, La Grola and La Poja have set the highest benchmarks for Valpolicella's wines.

#42 Wine Spectator Top 100 of 2011

Blend of Alfrocheiro (early ripening Dão grape with good color, rich tannin, and balance of strawberry-like fruit and acidity), Tinta Roriz (aka Tempranillo in Spain, an early ripening varietal which produces good yields and flavors reminiscent of red fruits, plums, strawberries and blackberries. It has firm tannins and responds well to oak aging) and Touriga Nacional (One of Portugal's signature grapes, indigenous to the Dão. It has firm, rich color and complex aromas of raspberries, ripe blackcurrants, savory herbs, violets and licorice.).

My Notes:

About Quinta de Cabriz:

In 1989, in the heart of the Dão wine region, in the village of Carregal do Sal, Dão Sul is born. Inspired in Quinta de Cabriz, a property with a magnificent manor house and chapel of the XVII Century, Dão Sul has become a reference of winemaking in the Dão.

Of the vineyards surrounded by pine trees, the grapes produced in integrated production give way to wines with balanced acidity and delicate aromas of the brand Cabriz. With a portfolio that ranges from Cabriz Colheita Seleccionada to Cabriz Four C, from Spirits to sparkling wines, the white and red grape varieties are vinified in a modern cellar with the support of a modern laboratory and a fully equipped tasting room.

Cercius is a profound ruby color. The nose is intense and complex, with aromas of dark berries, licorice, and garrigue herbs. Opulent and velvety, without being heavy, this wine's fruity finish has an aerial expression of ripe tannins.

Pairs well with various meats and cheeses including wine-braised beef, raviolis with cepe mushrooms, roasted duck, veal chops with radicchio, white beans, grilled leg of lamb with thyme and allspice, brie, and for the more adventurous, epoisses, livarot, maroilles, or munster.

Additional wines from Michel Gassier:

About Michel Gassier:

In the northern Vaucluse, on the right bank of the Rhone river lies the village of Visan where the legendary mistral winds of Provence sweep over the vines. The Latin name for these north-northwest winds is CERCIUS – the defining feature and raison d'etre for partners Michel Gassier, Philippe Cambie and Eric Solomon to launch this new project. Between the brisk winds and an elevation of 400 meters, the grapes' freshness is protected and then preserved during vinification in concrete tanks.
