Aromas of freshly roasted coffee beans, ripe black cherries, bittersweet chocolate and new leather emanate from this classic Napa Valley Cabernet. The wine glides smoothly across the palate with flavors of sweet berries accented with walnut and oak flavors. With beautifully married flavors and tannins, our Oberon Napa Valley Cabernet Sauvignon has a lovely, seamless texture. Malolactic fermentation in barrel, combined with 18 months oak aging, further concentrated the wine's vibrant red cherry, candied blackberry, licorice and spice flavors, adding a hint of cocoa powder and a lingering toffee note on the finish.

The beautiful weather throughout the critical months of September and October of 2005 provided us with ripe and perfectly balanced fruit. At Bernardus, all our grapes our hand picked and very gently pressed in order to retain their best characteristics.

The resulting wine is a perfect expression of Monterey Chardonnay, with bright citrus and tropical fruit aromas married with mineral notes and subtle toasty oak nuances. The lush, opulent palate is intense and focused with complex flavors of ripe pineapple, lime, mineral notes, and crème brulèe lingering on a long, creamy finish.

Winemaker's Notes:

Each Chardonnay lot was kept separate throughout the aging process to retain the individual flavor characteristics. After gentle crushing, Winemaker Laurie Hook fermented the juice in French oak barrels (77 percent new) to enhance the natural richness in the wine. The lees were stirred weekly to develop a nutty-toasty character and fully integrate the oak flavors, encouraging a good balance. All of the wines were put through malolactic fermentation to encourage a lush creaminess.

After 9 months aging, Winemaster Ed Sbragia and Winemaker Laurie chose the richest, most expressive lots and blended them to create an intensely aromatic and flavorful wine featuring lemon zest, sweet vanilla, baked apple and spicy oak aromas layered with rich flavors of pineapple, and hints of minerality and spice that lead into a long and bright citrus-infused finish.

Richly flavored and beautifully balanced, this vibrant wine offers a pure expression of Cabernet Sauvignon. Layers of black plum, white chocolate, vanilla and anise aromas leap from the glass, accented by an appealing hint of violets. On the palate, smoky plum, blackberry and supple leather flavors are supported by smooth yet substantial tannins.

Enjoy this approachable Cabernet Sauvignon with filet mignon, game bird or grilled eggplant. The dark fruit and spice components would also complement Osso Bucco nicely.

About Newton Vineyard:

Peter and Su Hua Newton purchased one square mile of tumbling slopes high up on Spring Mountain overlooking St. Helena in 1977. The Estate was planted to Merlot, Cabernet Franc, Cabernet Sauvignon and Petit Verdot. Merlot thrives in a land which is rocky mixed with clay beneath the surface, while Cabernet Franc and Petit Verdot like an impoverished soil, and Cabernet Sauvignon is happy in stony loam. The mountainous slopes of the vineyards not only have these soils, but also a full range of exposures. Spring Mountain provides the vines get all the sunlight they need without any baking heat stress.

Chardonnay needs chalky or loamy soil in a cooler region. Newton owns an old vineyard in Carneros and also has long-term grape contracts for several hillside vineyards verging on that region. Newton Unfiltered Chardonnay, introduced in 1990, is said to be the first unfiltered wine produced and sold in California, and is now regarded as an industry benchmark.

Su Hua insists on picking only ripe grapes from the vine. Her method of quality control is to be involved in every aspect of the harvest, during which time she can be found every day among the pickers. To ensure that only ripe grapes are harvested, there can be up to four separate pickings in a single vineyard - very difficult to do but, she believes, there is no other way to produce a great wine.

Rombauer Vineyards' 2007 Carneros Chardonnay is smooth, rich, and elegant, true to the Rombauer style. Apple, peach, and tropical fruit flavors weave together in a nice range of flavors that linger on the palate ending with a long, crisp, fruity aftertaste. The oak tones from both barrel fermentation and aging are nicely melded into the flavor and finish of the wine.

Rombauer Vineyards Carneros Chardonnay is ranked as the 3rd Most Popular Chardonnay in American restaurants according to a recent poll in Wine & Spirits magazine.

Winemakers comments:
"We have a particular style that we've developed with that wine. I wouldn't call it buttery per se, but it is rich. Maybe some people might think it has buttery descriptors. We say it's fruit forward and that the oak is very integrated into the wine. Probably texturally it seems buttery."
