Winemaker's Notes:

The color is bright, crystalline straw yellow. The aroma is very expressive and exuberant, with tremendous personality. Notes of herbes fines framed by aromas of lime and mineral notes that lend complexity and elegance. On the palate it's voluminous, well-balanced, and fresh, with the clear notes of green chilies that are so typical in this valley and a harmoniously crisp finish. with oysters and ceviches. Also good with baked or grilled fish and goat cheese.

Winemaker's Notes:

Deep, intense ruby red. There is a well-developed bouquet with a rich combination of blackcurrant and the floral nuances associated with delicate undertones of graphite, tar, chocolate and vanilla. Elegant and well structured, this wine has an excellent balance and wonderful persistence.

Delicious with wild game and fowl, ripe cheeses, and spicy red meats. The wine is unfiltered in order to completely maintain its character, therefore we recommend decanting it before serving.

La Carraia was founded in 1976 by the Gialetti and Cotarella families. Riccardo Cotarella, respected throughout Italy and abroad as a leading authority in the production and marketing of Italian wines, is the winemaker at this estate. We shortened the name to Evolution (we also trademarked it) and had fun with the package. The new label picks up similar elements of the old label with a fresh twist. It reflects how Evolution evolves: the same classic blend of 9 white grapes, each pressed separately, adding its own character.

At the same time, every new bottling has its own subtle and fresh personality; this edition is slightly less sweet than the last. The 9 grapes tie together perfectly, creating a smooth, layered white wine that can hold its own or stand up to just about any food pairing you dare to serve it with. Pioneer James Sinclair built one of the first homes in Blenheim and was closely associated with the early development of the town. Over time the name of the property reverted to the original Saint Clair.
