About Caymus:

As the Wagner family celebrated the 40th anniversary of Caymus Vineyards in 2012, they thought back to 1972 which Charlie Wagner, Lorna Belle Glos Wagner and their son, Chuck, built their winery among the vines planted on the family's ranch in Rutherford, California - the center of the Napa Valley. In 1975, the Wagners produced their first Special Selection Cabernet Sauvignon, which remains the only wine to have twice been named Wine Spectator's "Wine of the Year" (1984 and 1990 vintage).

Winemaker's Notes:

Fonseca Bin No. 27 was created over a century ago for family consumption, and only released commercially in 1972. It is produced primarily from wines from Fonseca's own quintas in the Cima Corgo and thus shows an exceptional quality and consistency from year to year. Blended from reserve wines selected for their intense fruit character and depth of color, Fonseca Bin No. 27 spends four years in large wood vats prior to bottling. Although it may improve slightly with bottle age, Bin No. 27 is ready to consume when bottled. It does not require decanting, as a cold precipitation prior to bottling prevents any "crust" from forming. Its well-knit structure, rich, velvety full body and luscious blackcurrant and cherry flavors, also evident in the nose, carry into an intense, lingering finish. Bin No. 27 should be served at room temperature either alone or with simple, classic last courses and desserts. It is best consumed within two weeks after uncorking.

About Fonseca Guimaraens:

Fonseca Port was founded in 1822 and grew rapidly in reputation and importance. Since its foundation, successive generations of the Guimaraens family have upheld the Company’s reputation. Today, Fonseca occupies a leading position as a specialist producer of quality wood ports and as one of the top vintage houses.

Fonseca may indeed be unique in the annals of Port in that every Fonseca vintage port in the last 100 years has been made by just four members of the Guimaraens family. The fourth member, David Guimaraens, continues the tradition having taken over from his father as winemaker in 1992. This remarkable continuity of winemaker is clearly evident in the wine. The company continues to foot tread every single grape grown in its three vineyards in granite stone troughs in the traditional way.

In his book, Vintage Port, James Suckling has written: "Fonseca is the King of Port. It produces the best Vintage Port in every declared year, with very few exceptions." Robert Parker summed up Fonseca's style as "The most exotic and most complex Port...With its lush, seductive character, one might call it the Pomerol of Vintage Ports."

This brilliantly clear, light straw-colored wine smells of pineapple, passion fruit, guava and grapefruit, with a hint of minerality. The palate offers generous nectarine and grapefruit with some flinty notes and a clean, refreshing finish. Simi Sauvignon Blanc pairs wonderfully with gazpacho, raw oysters, and a beet, orange and goat cheese salad.

About Simi:

In 1876, brothers Giuseppe and Pietro Simi began making wine in San Francisco from Sonoma County grapes and eventually planted vineyards near Healdsburg. Simi's historic stone cellars were built in 1890 and are still used to age the wines. Today, Simi is recognized as a leader in innovation and experimentation with a history of over 125 years of cutting-edge winemaking.

Their Alexander Valley vineyards possess some of the most diverse soils of any wine-growing region. Years of geologic activity – from an ancient mudflow to the meandering Russian River and Mayacama Creek – has created numerous distinct soil types and a range of microclimates. Here they grow the red Bordeaux varietals for their Reserve Cabernet and Sauvignon Blanc as well as Sauvignon Blanc and Semillon for their Sendal.

Their Russian River Goldfields vineyard is planted to field selections chosen from the oldest and best Chardonnay vineyards in California. The combination of diverse clones and the cool, Russian River Valley climate produce Simi’s distinct Reserve Chardonnay.
