The predominance of Pinot Noir provides the structure that is so typically Clicquot, while a touch of Pinot Meunier rounds out the blend. Chardonnay adds the elegance and finesse essential in a perfectly balanced wine.

About Veuve Clicquot:

The House was founded by Philippe Clicquot in 1772. Since its inception, Veuve Clicquot has been a specialist in Champagnes based on Pinot Noir, especially Rosé. In 1803, François Clicquot was married to Barbe-Nicole Ponsardin. Madame Clicquot was widowed just two years later. Veuve Clicquot (Veuve means widow in French) took over her husband's business. In 1810, the house took the name Veuve Clicquot Ponsardin. The way that she ran her company, from risky overseas ventures to startling technological innovations, changed Champagne forever. Her motto is still the guiding principle of our company – "Only one quality – the finest."

In 1816, Mme. Clicquot invented the process, called rémuage or riddling, that removes the yeast from the bottle. She used holes cut in her kitchen table to perfect the method of slowly tilting and turning the bottles to gather the spent yeast in the neck of the bottle. Once settled it could be removed by freezing the neck in a brine of salt and water, removing it, and recorking.

The company was taken public in 1963, and merged with Louis Vuitton Moët Hennessey in 1986. Today, Jacques Peters is the chief winemaker at Veuve Clicquot, and was appointed cellar master in 1985. He has undertaken an ambitious program since this time to upgrade the grape sources, improve the vineyards, and improve the cellars and production facilities.

60% Pinot Nior, 40% Trepat

Beautiful scents of raspberry and cherry on the nose with fresh, clean strawberry and cherry flavors in the mouth and a consistent bead. The finish is clean and crisp and invites another sip.

Cristalino Brut Rose Cava is an excellent match for fried appetizers such as calamari or light desserts such as creme brulee. It is also excellent on its own or with fresh fruit.

Did you get a bottle with a gold label rather than this white label? No worries, it's still the same great Cava. Cristalino is undergoing a label change and released some bottles with the original packaging and some with the white label packaging.

About Jaume Serra Cristalino:

The winery behind Cristalino, Jaume Serra, was founded in 1943 by distinguished enologist Jaume Serra Guell. It is located in the Garraf subdivision of the Denominacion de Origen Penedés, the largest wine growing area in Catalonia. Jaume Serra lies within the “El Padruel” estate in the Mediterranean Coastal town of Vilanova y la Geltru, some 50 kilometers south of Barcelona,. Wine making began on this property in 1947. The winery underwent renovations in 1984 and then again in 1997, after the J. García Carrión family purchased the property.

The white varietals of Parellada, Chardonnay, Macabeo and Xarel-lo are grown in Jaume Serra's vineyards situated in the Alt Penedés, a sub region of the Penedés, and are used to produce the area's famous sparkling wines, called "Cava". By law, Cava must be made in the Methode Champenois or Champagne Method. Due to European regulations prohibiting use of that term, Cava is now labeled as Methode Tradicional, which has the same requirements with an added stipulation that cava must age for a minimum of nine months on the lees before release. After researching local yeasts, the Jaume Serra winery has taken the extraordinary step of importing their yeast from Champagne, France in order to impart the finest quality to their Cavas.

Named for the proprietor's eldest daughter, Cambria Katherine's Vineyard Chardonnay is a wine that is both vineyard designated and estate grown. The vineyard is located along the Santa Maria Bench in Northern Santa Barbara County and receives meticulous care throughout the growing season.

Winemaker's Notes:

The 2004 Beaulieu Vineyard Reserve Tapestry weaves five classic varietals — Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot and Malbec — into an elegant, beautifully balanced wine. The deep, expressive aromas and flavors are filled with black cherry, briary blackberry, cassis, dark cocoa and cedar character. Pre-fermentation maceration, gentle punch downs in open-top fermenters and in-barrel malolactic fermentation all contributed to the wine's richly textured flavors.

Beaulieu barrel-aged the wine for 20 months, with 70 percent new barrels, to add warm vanilla nuances. For even more complexity, they used a tapestry of different oak barrels; over half were French, with the balance being American, Hungarian and Russian.

This wine makes a delicious complement to seared duck breast, mesquite grilled steak, filet mignon with shiitake mushrooms or roast lamb.

The deep roots of Beaulieu Vineyard were first planted back in 1900, when founder Georges de Latour noticed similarities with his native Bordeaux and declared the Napa Valley ideal for winemaking. This Carneros-designated Blanc de Noirs has a delicate copper color and fruit aromas of strawberry and cherry overlaid with warm cocoa from Pinot Noir. Its softer cousin Pinot Meunier contributes a warm spice, almost clove character with overtones of orange peel and freshly baked bread. To enhance this Cuvee 391, wines from the 1991 vintage were blended with selected 'vin de reserve' held back from previous years. 1991 was characterized by cool conditions during maturation and harvest, critical to flavor development for sparkling wine. Three years of aging lends this wine breadth and body, while retaining its freshness and fruitiness. The balance is stylishly crisp, reflecting the Carneros region's full ripe flavors.
