Winemaker's Notes:

The 2007 vintage was excellent for Cabernet Sauvignon in Napa Valley. Responding to a cold, dry winter with 40 to 50% less rainfall than average, the vines' vigor was diminished from the outset, producing minimal foliage. Spring temperatures were warm, starting the growing season quickly with early bloom and fruit set. With mild temperatures prevailing through August, the grapes ripened slowly and evenly in ideal conditions of sunny days and foggy evenings. A temperate fall allowed the Cabernet Sauvignon fruit to hang longer, giving us concentrated and spectacular flavors.

Opulence defines this rich bouquet of black cherries, blackberries and spice. Lush aromatics of wild thyme and French lavender meet traces of mocha and roasted coffee, balanced with silky tannins that augment a long finish. This wine demonstrates why Cabernet Sauvignon from the legendary Oakville AVA is some of the most sought-after in the world.

Over 30 years ago, Jack Cakebread came to photograph the Napa Valley for a book and while there, he casually mentioned his interest in one day owning a vineyard to some family friends who had a ranch in Rutherford. Caymus Vineyards produces two Cabernets Sauvignons – a "Napa Valley" and the venerable "Special Selection." Both Cabernet bottlings have aromas and flavors which can only be achieved through "hang time" – a technique which chances the loss of crop if early winter sets in. Leaving the fruit to "hang" on the vine unusually long develops suppleness, increases color, and matures the tannins of the grapes. The wines are abundant in textural tannins yet soft as velvet. Crop thinning, allowing measured sunlight to reach the vine's fruit zone, and waiting for increased ripeness are all part of our viticultural practices. Caymus Cabernets offer a wide array of aromas and flavors including cocoa, cassis and vanilla.

Caymus Special Selection is the flagship wine of the Wagner family and is comprised of the very best barrels of the vintage. This wine is not produced in difficult years. Caymus Napa Valley is more representative of a standard Cabernet of Napa Valley, as it is a bit less precocious than the Special Selection, but still delivers big. Caymus prides itself on producing wines that are as approachable in youth as well at maturity. Both the "Napa Valley" and "Special Selection" Cabernets are produced under the winemaking hand of Chuck Wagner.

In 1975, the Wagners produced their first Special Selection Cabernet Sauvignon, which remains the only wine to have twice been named Wine Spectator's "Wine of the Year" (1984 and 1990 vintage).

Made with full extraction and long skin contact, this wine is made to maximize body and weight while having long silky tannins. The 2006 Cabernet Sauvignon has aromas of ripe dark cherry and blackberry notes with mocha, clove and a hint of vanilla. This wine offers lush, juicy cherry and blueberry flavors. On the palate, sweet vanilla, clove, and a hint of cinnamon are brought forth by the nuances of French oak aging. Seamless with a nice long finish, this wine is very elegant with a fine structure.

Atlas Peak was established in 1987. Over time it became clear that Atlas Peak's most valuable hidden resource was literally underfoot: the elevation of its vineyards. The grapes growing at high elevation, and above the natural fog line, experience much lower daytime temperatures than those on the valley floor, allowing the grapes to stay cool while gaining maximum sun exposure. As a result, growers up on the mountain can afford to harvest later and pick for flavor with less worry about over ripening and excessive alcohol. No grape develops as well in mountain conditions as Cabernet Sauvignon.

Scarlet color and brackish edges. Nose is sweet fruit and smoked meats. This wine already has some bouquet- truffle mushrooms, vanilla style oak. The palate is creamy richness with nuances of leather and a cocoa-style fine grain tannin. The flavors and structure of this vintage are consistent with the Caymus style - spice, toast, cassis - fully rich, yet supple.

Bright, cran-rasberry and crushed black pepper aromas; indicative of non-raisiny Dry Creek Zinfandels with notes of white chocolate and espresso from the oak aging. The flavor has concentrated, raspberry fruit with almost sweet (from the oak) and lush palate with forest floor oak complexities. The finish is soft, and is extremely drinkable and fruit driven with wonderful coffee roast flavors. It is to be drunk in its youth, but will age nicely for about 3-5 years.
