Winemaker's Notes:

This wine is composed of primarily Cabernet Sauvignon, blended with small amounts of Syrah and Petit Verdot. The hand harvested grapes enter the gravity flow winery and are hand sorted, then whole berries are gravity fed into tanks for fermenting before pressing. Individual lots are moved to barrels for malolactic fermentation, then blended and barrel aged for 18 months and aged an additional nine months in bottle, allowing for the perfect balance of fruit, tannin and oak.

Our Ferrari-Carano Cabernet Sauvignon pairs well with roasted, broiled or barbecued heavy game and red meats such as lamb, beef, pork and veal. Medium and strong-flavored cheeses, such as blue cheese or sharp cheddar, also pair nicely with Cabernet Sauvignon.

Inky black and ruby red in color, on the nose the 2007 Marlstone pairs complex aromas of ripe wild blackberry fruit, plum and black licorice with pleasing notes of cigar box and brown spice. On the palate, the wine delivers concentrated blackberry and plum flavors and rich, supple tannins followed by a powerful, lengthy finish, wrapped in velvety notes of mocha.

The wonderfully pure, pretty nose of our 2008 Cabernet Sauvignon is redolent of warm berry cobbler, with lovely toasted boysenberry and blackberry scents joined by hints of wild cherry, loamy earth and oak vanillin. On the supple, beautifully structured palate, the wine offers rich, vibrant blackberry, plum and black cherry flavors framed by perfectly integrated tannins and a long, savory finish.
