The 2005 Alexander Valley Cabernet Sauvignon beautifully expresses the full aromatic ripeness of this exemplary vintage. It is full bodied and yet refined, and consistent in its color, aroma, palate and finish. It has a dark garnet color and a nose of black cherry, clove, cinnamon, lavender and licorice. It is seamless on the palate with a solid core of berry fruit, velvety tannins and excellent length. With proper cellaring it should give drinking pleasure through 2032.

Winemaker's Notes:

The 2005 Napa Valley Cabernet Sauvignon is a nuanced wine that illustrates the results of cool, gradual ripening and a deft balance of varietal components. It has a dark garnet color and a complex nose of boysenberry, truffles, wild game, soy and black pepper. On the palate, the wine has a silky mouthfeel and an elegant, long finish with a slight tannic grip. With proper cellaring it should give drinking pleasure through 2032.

Our 2005 Napa Valley, a blend of wine from several selected vineyards in the appellation, is 80% Cabernet Sauvignon, 10% Merlot, 7% Cabernet Franc and 3% Petit Verdot. We blended the vineyard lots in early 2006 and transferred the wine to 100% new American oak barrels for aging. Blending prior to barreling allows us to achieve a balance of the wine's primary elements, such as fruit and tannin, before they are influenced by oak. The wine was then aged in barrel for approximately 25 months and another 20 months in bottle to harmonize its components before release.

Silver Oak Cellars was started in 1972 with a simple driving philosphy - to focus production on only one varietal, Cabernet Sauvignon. What's more, they resolved to create a wine with a style all its own: not another hard, tannic red wine requiring years of aging to enjoy, but a wine of fully developed flavors and a velvety soft texture on the day it is released for sale.

Silver Oak Cellars produces Cabernet Sauvignon from two appellations. Their Napa Valley derives its fruit from both owned and contracted vineyards, and is produced entirely at their Oakville winery. Beginning in 1994, small amounts of Cabernet Franc, Merlot and Petit Verdot have been included in their Napa blend to add complexity and softness.

Silver Oak also produces stellar Cabernet from their Alexander Valley vineyards. A critical reason for the success of this wine, and every wine they make, has always been that they create the final blend before aging it in American oak barrels and then bottles. Over the course of four-and-a-half years, the wine’s flavors, aromas, and textures have an opportunity to meld with one another and the wood’s delicate qualities to create the kind of graceful cohesion found only in the world's most elegant wines.

Light garnet in color, fresh crushed raspberries, strawberries, and cranberries are all in the aroma of this bright, fruit-driven Pinot Noir, with a hint of cinnamon stick and spice in the background. On the palate, pomegranate and cranberry fruit have a zesty appeal, paired with the subtle, classic underbrush character that distinguishes Pinot Noir. Moderately light bodied, the soft tannins and fresh acidity strike a nice balance, creating a light fnish with red fruit and a touch of spice. Overall, this red wine shows genuine Californian winemaking at its best, with flavors that are approachable yet entertainingly complex.

This wine offers generous aromas of ripe Bing cherries, blackberry, candied violets, cedar, and tobacco, plus hints of minerals and graphite. Sweet, densely packed and creamy in the mouth, but with firm, underlying structure that gives lift to the dark berry, chocolate, and coffee flavors. This is a very lush, soft, complex wine that coats the palate and spreads out on the long, lingering finish.

About Layer Cake:

Layer Cake is a wine that was inspired by my Grandfather and Grandmother. Every Sunday, my Grandmother would bake a huge layer cake for dessert. My Grandfather would pour me a little glass of wine and place it at the table for me. He explained wine in terms of that cake. 'The vines,' he would say, 'live in layers of soil just like the layers in Grandma’s cake; each layer bringing a different flavor.' My grandfather taught me that everything in life is about layers and complexity. I loved those words and when I was a cake-focused boy, it made perfect sense… in fact, it still does.

Since those early days I have been all over the wine world time and again. I have tasted thousands of different wines and there are only a few places that haunt me, always come back to mind, occupy my dreams and have drawn me back again to taste some more.

I started Layer Cake because I wanted to make a wine at a price that could be enjoyed everyday with abandon, yet made by hand (not in a giant factory) and made in some special places in the world that I have always loved. The mission was simply to shock people about how good wine could be at a very affordable price.

While the Layer Cake wines were not intended to be compared with Hundred Acre, they are rich and taste like they should simply cost a lot more. This is due to our rigorous fruit selection and small winemaking style. The same team of winemakers that work with me at Hundred Acre, work with me all over the world to craft a rich Shiraz in South Australia, fabulous Malbec in Argentina, spicy old vine Primitivo, aka Zinfandel, in Puglia, Italy, sleek Syrah in the Cote du Rhone, France and of course, some Napa Valley Cabernet Sauvignon. Each is very special in its own way and a phenomenal value.

With the making of each Layer Cake wine my Grandfather’s words and my Grandmother’s cakes come back to me. Layer Cake is a simple black and white label with, of course, my Grandmother’s giant layer cake on the front and my Grandfather’s words on the back…ENJOY!!

Winemaker's Notes:

Fresh, crystalline, and sharp, the first nose unveils an unusual dimension, an aquatic vegetal world with secret touches of white pepper and gardenia. The wine then reveals airy, gentle richness before exhaling peaty scents.
On the palate, the attack bursts forth, and matures into a sensual fullness that winds around itself, like a tendril of foliage. Notes of aniseed and dried ginger linger on the skin of fruit (pear and mango), more textured than ripe. The finish gradually unfurls and then settles, smooth, mellow, all-encompassing.
An indefinable je ne sais quoi, never upsetting the integrity of the wine, has worked its charm

Winemaker's Notes:

The fruit for our Starmont Chardonnay is grown in our favorite cooler areas of the Napa Valley, including Oak Knoll District and Carneros, where the maritime influence keeps the focus on crisp, vibrant fruit. The fruit was carefully sorted and whole cluster pressed to preserve freshness. The light oak treatment gives a round mouth feel and improved complexity, while highlighting the fruit driven focus of the wine.

Aromas of Graventstein Apple, Bosc Pear, mandarin orange, peach, apple tart with roasted hazelnut, vanilla bean and spice (nutmeg and clove). The wine has a soft entry leading to a round fleshy mid-palate and is filled with layers of fruit and spice. Toasty notes are accentuated on the long finish.

We recommend pairing with a butterflied, herb roasted chicken.

Our wines are produced solely by native yeasts. Our barrels are crafted from French oak that is aged to our specifications and specifically tailored to our program. All of our wines are bottled unfiltered and unfined.

Kistler Chardonnay is barrel fermented in our subterranean, gravel floor barrel rooms, and is aged sur lie in those same barrels, remaining for eleven to eighteen months until bottling.
