Winemaker's Notes:

The Godello grapes that go into it make Papa a jewel of a wine. Able to age similar to Chardonnay in white Burgundy, Godello is rapidly becoming the most popular white grape in Spain ahead of Albariño and Verdejo. Many top Spanish winemakers and Spanish wine writers believe Godello will be the grape that will put Spanish white wines "on the map." A grape that can communicate more than fruit, Godello conveys the geography of its place of origin, the aromas and flavors that the soil imparts to the wine. The vineyards farmed to make Papa are full of slate and granite, and the wine shows assertive aromas of rosemary, thyme, and oregano, underscored by a firm mineral character.

This fresh, mineral-inflected Godello will pair well with swordfish sautéed in butter and wild herbs, grilled or pan-fried sweet veal or pork sausage, and a host of casual foods like tapas, pasta with white clam sauce or fried oyster sandwiches.

La Colliere Rasteau is a rich, full-bodied Rhone blend made from 85% Grenache and 15% Syrah.

Domaine la Colliere is a small family estate founded by Georges Perrot. He began bottling his own wine in 2002, renting some cellar space from Andre Romero of Domaine Soumade fame. Prior to 2002, all the juice went to one of the big negociants.

A classic red-fruited Pinot Noir with dark, earthy, savory elements, characteristically cracked pepper, tea leaf, cinnamon, charcoal, matchstick, spice and plum. The acidity of the vintage gives a structure to suspend wood and tannin elements playfully on the palate. Balance is excellent, length good and final impressions are red, delicate and complex. Silk nap grip on the palate and acidity guarantee a very long life.

About Domaine Lafage:

Although only in his thirties, Jean-Marc Lafage already has almost 15 years of worldclass winemaking behind him. One of the most sought-after winemakers of Europe at the moment, Jean-Marc lends his expertise with Southern European varietals to several top estates in both France and Spain (he makes Las Rocas Garnacha with Eric Solomon) and also in South America. However, his best work is perhaps at home at his estate in the hills of the Roussillon with his wife, also an accomplished winemaker.

As the varietals come from different parcels all around the Eastern and Central Roussillon, they are always vinified separately, and then blended before bottling. The whites never pass through malolactic and the property always searches for freshness and expressive aromas in the blends. The reds can often show off a mineral component as Jean-Marc does not favor heavy extraction. Yields are amazingly low for wines at this price level. The wines are bottled unfiltered.

About Ken Forrester:

In 1993, hospitality industry veteran Ken Forrester and his wife Teresa purchased the historic Scholtzenhof estate, nestled at the base of the Helderberg in Stellenbosch. Originally established in 1689 as Zandberg, the property is one of the oldest wine farms in the Cape. Ken enlisted the help of his winemaker friend Martin Meinert in replanting and revitalizing the vineyards, with an aim to craft a white wine that could rival any in the world! Winemaker's Notes:

From a high altitude vineyard near Roaix, at the northern fringe of Southern Rhone, this wine is a blend of very old Grenache and Syrah. The vineyard's elevation gives this dark and concentrated Cotes du Rhone its unique finesse and balance.

This wine was neither fined nor filtered before bottling in order to preserve its personality and intensity. And although this wine could be enjoyed young, it will develop its full character much later and will keep its freshness for at least 20 years after bottling.

About Bodegas Berroja:

Bodegas Berroja founded in 2001 currently owns 37 acres (15 Ha) of vineyards in the town of Muxika , Bizkaia. Located in Zone 3 in the north of Spain between San Sebastian and Bilbao (Closer to Bilbao). Berroia is an estate-bottled wine made by Bodegas Berroja in the Txakoli de Bizcaia DO. Txakoli wines have a slightly “spritzy” effervescent character similar to vinho verdes from Portugal but whereas the latter are light wines with fresh, clean flavors and bright acidity, Txakolis have more complex aromas and depth of flavor on the palate along with a firm minerality that is their signature. The name Berroia refers to the area where the estate vineyards are located. Three Spanish DO regions in Spain produce Txakoli wines in the Basque country: Txakoli de Guetaria, Txakoli de Bizcaia and Txakoli de Alava. There are two Txakoli styles: a cider style and a still wine style. Both styles are made with the Hondarribi grape but one is more cider-like than the other. The still wine style shows the vibrancy and depth of the Hondarribi grape. The cider style has a life span of about 6 months while the still wine style develops for about 14-16 months. Berroia is made in the still wine style.

This remarkable Ribera has beautiful red fruit aromas and flavors on the palate along with vibrant acidity to deftly balance the firm structure and formidable volume. With meaty, herbal, and earthy aromas, this wine has the soul typical of great Riberas and the 2004 vintage's excellent evolution indicates this wine can age well for quite a number of years. Pair this with lamb shank, roast beef, grilled steak and braised pork shoulder. For more casual fare, beef, lamb or bison burgers on the rare side and ropa vieja are good matches.
