A wonderfully well-balanced wine, with fine bubbles, a persistent foam and a well-developed length on the palate. Fresh and powerful bouquet with beautiful ripe yellow fruit aromas. This Cremant combines the finesse of Chardonnay and the power of Pinot Noir.

About Simonnet-Febvre:

The Maison & Domaine of Simonnet-Febvre were founded in 1840 by Jean Febvre, a barrel maker by trade from the town of Montbard. In the early days, the house was known for its sparkling Chardonnays from Chablis, known today as Crémants de Bourgogne. Over the years, the Febvres acquired holdings in some of the greatest terroirs in Chablis. Today, the domaine comprises approximately 9 acres, crowned by a 2/3 acre plot in the Grand Cru vineyard of Les Preuses, with 3.5 acres of 1er Cru Mont de Milieu and 4.7 acres of communal Chablis vineyards. In 2003, Simonnet-Febvre was acquired by Maison Louis Latour. Since its purchase, the Latours have completely renovated the winemaking facilities, installing new stainless steel tanks and pneumatic presses. The vineyards have been reworked with the same sustainable vineyard practices utilized in Latour’s 125 acre domain in the Côte d’Or. Maison Louis Latour also hired a talented new winemaker, Jean-Philippe Archambaud.

Winemaker's Notes:

In 2000, the Castano family acquired and re-organized some old vineyards located at the lowest part of Sierra Salinas, between the provinces of Murcia and Alicante and decided to have a winery built there. The winery is a state of the art, gravity flow facility on the mountains' foothills at about 650 meters above sea level.

A dense, dark red and intense bouquet of dark fruits with hints of black berries and a smoky tinge. The wine is full bodied with concentrated fruit flavors that border on juicy sweetness yet with enough tannin and acidity to balance. Enjoy with very full flavored dishes, especially those cooked over a fire.

From 28 year old vineyards - Monastrell, Garnacha Tintorera & Cabernet Sauvignon.

In 2000 the Castano family acquired and re-organized old vineyards located at the foot of the Sierra Salinas Mountains, between the provinces of Murcia and Alicante, and built the Bodegas Sierra Salinas. The vineyards are situated at diverse altitudes with a range of soil types and arid micro-climates characterized by cold winters and warm summers.

Five different grape varieties are grown on the property including: non-irrigated Monastrell bush vines (50% of the total density of the plantation) and irrigated Cabernet Sauvignon, Garnacha Tintorera and Petit Verdot.

Winemaker's Notes:

Although the Cave Coopérative de Tain l'Hermitage is one of France's best, every year young and dynamic growers leave this cooperation to make and bottle wines themselves. One of them is Gilles Robin who started his own domaine in 1996. His vineyards are located in the appellation of Crozes-Hermitage where over 11 hectares of Syrah is planted on the stony and sandy ‘La Terrace de Chassis'.

The ruby coloured Cuvée Papillon is an excellent example of this style with a nose of ripe plums and prunes, mulberry, violets and olives. The palate is round and pliant with lots of ripe fruit upfront that slowly stretches to a spicy finish. The springy character of the youthful fruit is further enhanced by a short – about 6 months – élévage on oak. This is really different and interesting drinking, from an excellent vintage.
