About Domaine de Saint Cosme:

Louis Barruol is the 14th generation Barruol to make wine at Saint Cosme. The Chateau was built in the late 16th Century on the site of a former Roman villa, and the remains of a Roman wine cellar, carved into the stone of the hillside, still exist in the chateau's caves. There are 37 acres of vineyards and the vines average 60 years of age. The old plots (pictured on the Gigondas label) and stitch across the escarpment of the ragged Dentelles de Montmirail, an oft-painted mountain range.

Winemaker's Notes:

A golden color, distinctive of black grape varieties. Very fine bubbles. On the nose, it has a beautiful aromatic complexity, ripe fruit and spicy aromas, with hints of roasted apples, apple compote and peaches. On the palate, there is a subtle combination of structure, length and vivacity. The bubbles are like velvet. Flavors of pear, brioche and spicy aromas, notes of fresh walnut.

Pair with all fish, especially sushi and sashimi, shellfish such as shrimp, prawns, crayfish and grilled lobster, poultry and white meat, cashews, parmesan or prosciutto.

About Simonnet-Febvre:

The Maison & Domaine of Simonnet-Febvre were founded in 1840 by Jean Febvre, a barrel maker by trade from the town of Montbard. In the early days, the house was known for its sparkling Chardonnays from Chablis, known today as Crémants de Bourgogne. Over the years, the Febvres acquired holdings in some of the greatest terroirs in Chablis. Today, the domaine comprises approximately 9 acres, crowned by a 2/3 acre plot in the Grand Cru vineyard of Les Preuses, with 3.5 acres of 1er Cru Mont de Milieu and 4.7 acres of communal Chablis vineyards. In 2003, Simonnet-Febvre was acquired by Maison Louis Latour. Since its purchase, the Latours have completely renovated the winemaking facilities, installing new stainless steel tanks and pneumatic presses. The vineyards have been reworked with the same sustainable vineyard practices utilized in Latour’s 125 acre domain in the Côte d’Or. Maison Louis Latour also hired a talented new winemaker, Jean-Philippe Archambaud.

About Chateau Rauzan Segla:

The wines here have delighted many well-know figures, most famously Thomas Jefferson who came across this wine during his visit to the vineyards of Bordeaux, placing an order for several cases of it. He thus became a fervent admirer or Rauzan-Segla wines. Some decades later, the 1855 Classification ranked Chateau Rauzan-Segla as a Second Growth.

The current chateau was built in 1903, designed by architect Louis Garros, who drew inspiriation from the original Perigord-style buildings in the the chateau, as well as G. LeBreton who designed the park and green spaces. Then time went by and the chateau gradually fell into a slumber.

Then, CHANEL purchased Château Rauzan-Ségla in April 1994 and immediately started a full renovation programme. The vineyard has been drained – a 15-kilometer network is now in place, 2 parcels of Petit Verdot were planted and 3 hectares of vines were grafted over with Merlot. Today, 51 hectares are in production for an average total production of 200 000 bottles – Château Rauzan- Ségla and its second wine Ségla. The winery has been adapted and large vats progressively replaced by smaller capacities – matching the parcels' sizes. From the 2004 picking on, grapes will be sorted on two 10-meter long vibrating tables, so that each single berry is checked before entering the vats. Maturation cellars have been completely renovated and a new room built for the bottling-labelling machines – making Château Rauzan-Ségla fully independent for the entire production process.

Stylistically, Mirabelle Brut resembles some of its French cousins with its elegant, toasty aroma which leads into crisp and complex flavors on the palate. It is impossible to mistake Mirabelle's Northern California heritage - the freshness mid-palate continues through to the finish. Mirabelle Brut is a unique blend of hand-harvested bunches of Napa, Sonoma and Mendocino county Pinot Noir and Chardonnay. Mirabelle pairs well with shellfish, light appetizers or hearty, vegetable-based soups.

The non-vintage Mirabelle combines the bright, vibrant fruit of the 2002 vintage with the equally dynamic wines of vintages past. Complete with a green apple and jasmine fragrance, filled out by tropical fruit notes, the aromas merrily greet you from the glass. The bright citrus entry on the palate gives way to subtle honey and caramel, with just a hint of fresh cream to balance the zesty acid. Mirabelle, as ever, demonstrates the illustrious combination of yesterday and today, with age enhancing youth and freshness complimenting the more complex characters.

The 2008 Faust is a worthy successor to the highly lauded 2007 vintage in Napa Valley. The wine opens with aromas of red and black cherries, hints of violets and warm spices. A lush, full entry on the palate with blackberry, cassis, nutmeg and dark chocolate flavors leads to a plush, supple mouthfeel. A complex finish lingers with dark fruit and plenty of richness.

In Goethe's most famous work, the aging scholar Dr. Faust barters his soul in the afterlife in exchange for another chance at youth. He gets his chance, yet ultimately his soul is saved by love.

Faust is the epitome of the style that has made Napa Cabernet Sauvignon world renowned: bold and powerful, yet elegant and concentrated. Top Cabernet Sauvignon lots are selected from vineyards Agustin Huneeus owns in Rutherford, a Napa Valley appellation synonymous with the best of Napa Valley Cabernet, as well as the up and coming, soon to be named Tulocay viticultural area south of Atlas Peak.

Both vineyards are carefully tended to produce low yields and great concentration. The grapes are double sorted and crushed at Quintessa, one of the Napa Valley's most technologically sophisticated wineries, featuring gravity-flow design, oak fermentation and naturally cooled caves.
