Chateau Hyot showcases the masterful skill of winemaker Amelie Aubert and consultant Michel Rolland. The wine is a Merlot-based blend, from 40 year-old vines, with Cabernet Franc bringing sophisticated aromas and silky tannins, and a dose of Cabernet Sauvignon for a structural backbone.

A deep respect for the vine is the driving force behind Amelie Aubert's philosophy and approach to making wine. "Quality is not possible with quantity," she explains, "and I want my wine to capture the essence of this fantastic terroir."

This unique white blend is a sensory revelation. We wondered what it would be like to blend grapes from three high-elevation vineyards from across Argentina from three talented growers, and we were happily surprised. This baby is bright, fresh, and crisp with ripe white peach and floral notes in the nose. Honeydew rind, ripe apple and a hint of crisp lime explode on the palate, quickly followed by a complex and balanced finish. For food partners, we're still pondering what food this wouldn't go with, but for sure it's a wine to keep in the fridge for all occasions between Easter and Halloween.

In that time, we have discovered a handful of grape growers whose results in the vineyards with specific varietals have been truly amazing--year in, year out. Our first encounter with many of these growers was at a posta del vinatero, or "tavern of the grape grower." Here they drank wine and spoke passionately for hours about their soils, their vines, and their quest for superior flavors in their grapes. A spicy Shiraz from the vineyards of Central Victoria brightens with a boost of Viognier for aroma and balance, as often practiced in France's most highly regarded appellation of the Northern Rhone Valley, Côte Rôtie. The grapes grown in this Austrialian vineyard where planted on 19th century French rootstocks, another nod to the French tradition & influence in this new world wine. This wine is a collaborative effort between two renowned wine families; Chapoutier from the Rhône Valley in France, and Terlato family of Napa Valley in California.

Domaine Terlato & Chapoutier combines the vision of Anthony J. Terlato, the founder of luxury importer and marketer Terlato Wines International, and Michel Chapoutier, the esteemed Rhône grower and vintner whose compelling wines have been exalted by critics around the world. The origin of the Terlato & Chapoutier partnership in Australia dates back to 1998, when Chapoutier enthusiastically told Terlato about a top vineyard site in Australia. Located on an eastern-facing slope on the southern edge of the Pyrenees Hills in western Central Victoria, the region’s unique iron-rich and schist soils could produce “great wines,” according to Chapoutier, and the resulting single-vineyard Shiraz from the "Malakoff" vineyard and Shiraz-Viognier blend have been highly lauded since their release in 2006.

The color shows a dark center with a garnet rim. The nose displays a lovely raspberry and pastille lift with a palate of red berry, dark plums and chocolate. Blending the three varietals gives Clancy's great complexity, richness of fruit flavor and a harmonious balance of soft tannin finish.

Dark and seductive in the glass, this classic Bordeaux-style blend manages to be approachable yet complex. Pronounced blackberry and blueberry on the nose mingle with cedar spice and a hint of wood, while notes of bramble fruit, cherry, vanilla and dried herbs please the palate. This wine consists primarily of Cabernet Sauvignon, with generous portions of Malbec and Petite Verdot to add depth to the tannic profile and color, and to enhance richness mid-palate. Cabernet Franc and Merlot also are in the blend.

The multidimensional character of this blend is well-suited for rich and robust foods. Try it with rosemary lamb chops with Swiss chard or pizza with Italian sausage. Or serve with a simple appetizer such as fig and blue cheese crostini.

Then he began to focus his efforts on what was to become his passion and career in the wine business. Along with his passion for Pinot Noir, he continues his role at Caymus in viticulture and winemaking alongside his father, Chuck. Winemaker's Notes:

This wine pulls you in from across the room. The soft straw color, the tiny streams of minuscule bubbles, and as you raise the glass, you get full aromas of creamy vanilla poached pear and fresh sour dough starter. The first impression on the palate is of how well balanced this wine is, playing the purity of fruit off of the fresh acidity while showcasing the wine's natural mineral notes. There are notes of ripe guava, red Anjou pear, Meyer lemon, and lightly toasted brioche, finishing with notes of honeysuckle and lemon curd. This is a delectable example of a fresh, vintage dated sparkling wine to impress and please.

Although the Valley of Valdizarbe has always been considered one of the best areas of production in Navarra and viticulture there is centuries-old, it almost disappeared due to the depressed prices of grapes and extreme weather conditions. This winery is one of the first to bring the vineyards back to the valley by the hands of an energetic winemaker, Concha Vecino, and an innovative vineyard manager, Jose Manuel Urricelqui.
