About Chateau Guiraud:

Château Guirard, located in the heart of the commune of Sauternes, has a 100-hectare vineyard in a single block. The vines are planted around the cellars and the château. The Semillon and Sauvignon Blanc grapes ripen very early at Guiraud and undergo tremendous natural concentration due to the effects of "noble rot" (botrytis).

The harvest takes place in several waves and the grapes are literally picked one by one. This process is not only risky, but accounts for very low yields. It nevertheless results in rich, complex wines.

The quality of Château Guiraud's terroir earned its classification as a First Growth in 1855. The Société Civile Agricole du Château Guiraud is managed by Xavier Planty.

Winemaker's Notes:

This junmai ginjo is a favorite with new and seasoned sake drinkers alike. It is soft and light on the palate, with a delightful fruitiness characterized by peaches, strawberries and papaya. It finishes with a white pepper spice.

Best served chilled, it complements light foods like salad, sushi and sashimi. It also cools down spicey Asian foods or can also be paired with very salty or rich foods, as well as certain cheeses and desserts.

About Saiya Brewery:

Founded in 1902 by Yataro Saito and now managed by the fifth-generation, Kotaro Saito, the Saiya Shuzouten is a hidden gem in the sake world. Since their inception, they have put our focus on using their own in-house yeast and milling rice properly. Fermentation takes place in a kura where the kurabito (brewers) all work in unison, and the sounds of traditional sake brewing songs can still be heard.

About Jaume Serra Cristalino:

The winery behind Cristalino, Jaume Serra, was founded in 1943 by distinguished enologist Jaume Serra Guell. It is located in the Garraf subdivision of the Denominacion de Origen Penedés, the largest wine growing area in Catalonia. Jaume Serra lies within the “El Padruel” estate in the Mediterranean Coastal town of Vilanova y la Geltru, some 50 kilometers south of Barcelona,. Wine making began on this property in 1947. The winery underwent renovations in 1984 and then again in 1997, after the J. García Carrión family purchased the property.

The white varietals of Parellada, Chardonnay, Macabeo and Xarel-lo are grown in Jaume Serra's vineyards situated in the Alt Penedés, a sub region of the Penedés, and are used to produce the area's famous sparkling wines, called "Cava". By law, Cava must be made in the Methode Champenois or Champagne Method. Due to European regulations prohibiting use of that term, Cava is now labeled as Methode Tradicional, which has the same requirements with an added stipulation that cava must age for a minimum of nine months on the lees before release. After researching local yeasts, the Jaume Serra winery has taken the extraordinary step of importing their yeast from Champagne, France in order to impart the finest quality to their Cavas.

Winemaker's Notes:

A prominent fragrance, a clean and fresh taste, with flavor deep into the recesses. Truly one of the "Rolls-Royces" of saké.

Each year, after the temperature drops below 14 Fahrenheit, Takasago builds an Ice Dome outside the main kura building. It is an igloo inside of which the temperature stays about 28 F, with 90% humidity and no wind The low temperature means "nasty bacteria" cannot survive, allowing them to make clean, pure, ultra-premium saké. Additionally, they separate the clear saké from the fermenting rice lees not by pressing, but rather by putting it into canvas bags and allowing the saké to drip out slowly overnight.

About Takasago Shuzo:

Takasago Shuzo was originally established in 1899 in Asahikawa City in Hokkaido, under the name Kohiyama Shuzo (our family name). We struggled, but continued to produce sake during the war. In 1965, we merged with another sake brewer in Asahikawa, and changed our company name, as well as the name of our sake, to Takasago. Our white-walled kura, built in 1909, is one of the more attractive buildings in Asahikawa.

Asahikawa has been called "the Nada of the North," because there was at one time a lot of sake being brewed there, and we are the oldest sakagura in the area. It is cold here, with the temperature regularly falling to -20C.

A beautiful, deep, vibrant rosé color. Has a surprising amount of body for a rosé wine, and beautiful aromas of fresh, ripe wild strawberries. On the palate, the flavors of strawberries and young cherries come rushing in, accompanied by some spice notes and a clean, dry finish. This is the perfect chicken wine and a charming companion to mildly spicy Asian cuisine. Keep one in the fridge at all times and you'll always have a delicious wine to enjoy with light snacks and cheeses. Best consumed in its youth.

About Crios de Susana Balbo:

After 22 years of winemaking, Susana Balbo has a strong sense of what she wants from her wines. From every harvest, she creates the grandest possible wines under her Susana Balbo label. To achieve this, she makes a rigorous selection of the finest barrels prior to making her final blends, dividing them into the parents (reserve level wines) and offspring or "crios."

Wines under her Crios label display ripe fruit flavors, excellent balance and concentration, and are meant to be enjoyed in their vibrant youth. These wines are produced under Dominio del Plata's code of sustainable agriculture.

Like Susana's own crios (a boy and a girl), they are extremely lovable and fun to be around. The label features a series of three connected and overlapping hands, an image inspired by a Mayan artifact. The artifact illustrates the interconnectedness of every generation, and the irony that we will be both the parent and the offspring at different times in our lives.
