The palate is refreshing; medium bodied & full flavoured with juicy raspberry, boysenberry & mulberry flavours. The sweet berry fruit flavours give complexity to the full flavoured and some almost herbaceous characters before a refreshing high acid & soft tannin tang with deceptive length.
Although this is the first vintage of the Peppermint Paddock Sparkling Chambourcin we suspect it will age much as the wine's non-sparkling counterpart will &in the idiosyncratic Australia Sparkling Red Wine tradition. Initially developing a more adult colour, browning ruby with a pale meniscus. The fresh fruity aromas and flavours transforming into more complex, earthy, smokey, gamey and old leather smells followed by soft round medium bodied earthy, spicy nutmeg and coffee mocha flavours before the consistent long fine refreshing acid and gentle tannin finish.
