Winemaker Notes

The High Trellis vineyard has been producing grapes since the late nineteenth century. It wasnicknamed "The High Trellis" as its vines were the first at d'Arenberg to be trained above knee-height.Over the past four decades, Cabernet Sauvignon from this vineyard has been released under thed'Arenberg label to consistent critical acclaim.

The 2005 High Trellis Cabernet has a dense plum color with crimson hues. The aroma is ripe blackfruits of blackcurrant, plum and cherry with roasted capsicum and minty notes. The palate is tight andcontrolled showing excellent concentration with plums, mulberries and varietal blackcurrant leaf.Ripe tannins and elevated acidity provide structure and finesse. This wine will age gracefully, developing elegant cigar-box, tobacco, coffee and mocha aromas.

The 2005 The High Trellis Cabernet Sauvignon was aged for 9 months in French and American oak. It is opaque purple-colored with an attractive perfume of cedar, spice box, cassis, plum, and black currant. This is followed by a medium-to full-bodied, structured wine with moderate tannin, ripe flavors, and lively acidity. It has 2-3 years of aging potential but can be enjoyed now.

d'Arenberg is one of the undisputed kings of Australian Shiraz and other Rhone varieties that have historically defined the region. A century on, their vineyards have grown to some 450 acres in McLaren Vale, including Shiraz dating back to d'Arenberg's first plantings in 1912, and nearly one-third of McLaren Vale's old bush-vine Grenache. Fourth generation winemaker, Chester Osborn, recently converted all of the family's vineyards to organics and biodynamics and moved to solar energy in the winery. All the while, in terms of winemaking, not much has changed--all the wines are basket-pressed, the reds foot-trodden during fermentation; everything is done in small batches, leading to an impressive array of bottlings every year, each showing a different facet of McLaren Vale terroir. Having been inducted into Wine & Spirits Magazine's Hall of Fame for earning a place on its Top 100 Wineries nine times, this accolade is a reflection of d'Arenberg's revered reputation worldwide.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

Known for opulent red wines with intense power and concentration, McLaren Vale is home to perhaps the most “classic” style of Australian Shiraz. Vinified on its own or in Rhône Blends, these hot-climate wines are deeply colored and high in extract with signature hints of dark chocolate and licorice. Cabernet Sauvignon is also produced in a similar style.

Whites, often made from Chardonnay or Sauvignon Blanc tend to be opulent and full of tropical, stone and citrus fruit.
