              The Caves de Bailly co-operative, near the village of Irancy close to Auxerre, was established in 1972. The co-operative specialises in Crémant de Bourgogne, for which it has earnt a strong reputation both domestically and abroad. The Caves de Bailly is part of the Blason de Bourgogne group, which has been instrumental in leading the Burgundian co-operative movement towards modern, high quality winemaking techniques.

              The last ten years have seen the vineyards almost double in size, growing all of the permitted appellation grape varieties including Chardonnay, Aligoté, Pinot Noir and Gamay. These are all trained on the single guyot trellising system and are monitored throughout the year to ensure consistent quality and perfect phenolic ripeness before being called in to the winery to crush.
