Wild Horse is a leader in the production of Central Coast Pinot Noir. Produced from only the finest lots of grapes and crafted with exacting care, Cheval Sauvage is the ultimate expression of Wild Horse Winery's commitment to world-class Pinot Noir. Exceptional fruit and traditional winemaking techniques give our Cheval Sauvage its renowned character.

The 2002 Cheval Sauvage comes from Ashley's Vineyard, located in the Santa Rita Hills of Santa Barbara County. Located ten miles from the Pacific Ocean, this cool-climate vineyard captures the richness and depth of flavor indicative of Santa Rita Hills fruit. The vineyard lies on a gently sloping hill with deep, well-drained clay-loam soils. The site's long growing season and low crop yields produce deeply pigmented, richly viscous wines with deep fruit and spice notes. This wine is our first effort to produce a single-vineyard offering from the area, and it quickly made a lasting impression with our staff as a rising star. Aromas of black cherry, nutmeg, and humus mingle on the nose, while the rich and silky structure yields flavors of pomegranate and black tea. Enjoy this wine with spicy poultry dishes and grilled salmon.
