Our 1997 Paso Robles Cabernet Sauvignon is a fine example as to why Paso Robles' Cabernets have become increasingly popular. It exhibits textbook Cabernet character, but it does so without the harsh, mouth-gripping tannins sometimes associated with this variety.
Aromas of ripe, dark cherry and other stone fruits combine with hints of mocha, anise, coffee and a slight earthy/dusty note. On the palate, the wine is velvety and full-bodied, delivering intense bright cherry fruit and a persistent, pleasing vanilla finish.
Located south of Paso Robles in Templeton, California, Wild Horse Winery was founded in 1983 by Ken Volk.
