The 2007 Cabernet Sauvignon release is deep maroon colour with a slight purple hue. The nose shows a stunningly complex purfume, with a level of integration that makes the wine difficult to pull apart. Layers of blackberry and blackcurrant fruit mingle seamlessly with hints of dried herbs and candied orange. The fragrant spicy oak sits beautifully in the background. Succulent blackberry and cassis fruit flavours provide a ripe density to the palate while the oak spice adds a savoury edge. The structure is fine and firm with a freshness of acidity that makes the mouth water and the rich, dusty dry tannins help create a wine of great power, length and persistence.

"The 2007 Cabernet Sauvignon has just 5% Malbec blended-in. Very deep garnet-purple colored, it gives pronounced blackberry / black currant and bay leaf notes with some dark chocolate and a whiff of cigar boxes. Concentrated, crisp and full bodied with a medium level of very fine tannins, it has a nice long finish. Just beginning to drink now, it should develop nicely over 3-7 years and cellar to 2018+."

I love this wine - it is everything I love in Cabernet. Good, rich fruit, cedar, dried savory herbs and a killer structure. Not over the top, not one that I'd throw in the cellar for a long period of time, but this has potential to evolve over the next 5 years or so. Tasting delicious now, with a lovely balance. Something I'd like with a pork roast or even a steak - not too heavy, so not for heavy foods, but a great all around Cab.
