Winemaker's Notes

The grapes come primarily from Valentin Bianchi's Doña Elsa Estate situated in Rama Caíida, San Rafael, Mendoza, around 2,493 feet above sea level. One of the coolest areas in San Rafael, the soil in Rama Caída is of sandy calcareous composition and alluvial origins. Picked by hand, the grapes are crushed, fermented at controlled temperatures in stainless steel tanks. There is minimal oak aging(no more than six months)in an effort to keep fruit fresh, lively and prominent.

Classic Cabernet aromas of black pepper, cedar, slight herbal and berry notes manifest themselves in the nose. This is a medium-full bodied wine with a soft balanced mouth feel and flavors that are similar to the aromas, which lead to a pleasing soft berry-vanillan finish.

Elsa Cabernet Sauvignon is a perfect accompaniment to a wide variety hearty foods such as red meats and pasta with marinara.
