This wine opens with vibrant blackberry compote, black cherry and dark chocolate aromas that lead into the signature bright cherry note of the vineyard. The aromas are followed by rich dark berry and plum flavors with enticing hints of French vanilla and sage. On the palate, the wine has a full entry with fine-grained tannins and a smooth texture.
Enjoy this estate-grown Cabernet with braised short-ribs with grilled polenta or roast chicken with tarragon and sage.
"Smooth and velvety with luscious plum and berry fruit; toasty and deep with notes of vanilla oak and generous flavors that come together seamlessly; stunning and delicious. "
"The 2010 Cabernet Sauvignon Estate Fay stands out for its delineation and nuance. Sweet floral notes meld into plums, menthol black cherries, violets and tar. With time in the glass, the wine fleshes out beautifully. Today the tannins are firm, but once they soften the fruit should begin to emerge more fully. There is plenty of vibrancy and energy in the 2010, although the wine does shut down quickly in the glass. Anticipated maturity: 2016-2030."
Vinous / Antonio Galloni
"Oaky but classy nose of blackcurrant and coffee. Full, rich, silky and savoury, with a delightful freshness. Serious winemaking here – needs time to show its potential.
"Fragrant black currant flavors shine through the polish of this wine, busty, sweet Napa Valley cabernet grounded by savory notes. The tannins meld oak and grape-skin into scents of cocoa, espresso, green tea and mushrooms. As the wine develops with air, it feels less fat, more toned, with red currant accenting the black fruit notes. "

"This 100% Cabernet is the winery’s best amongst their new releases. It’s rich and ripe with blackberries and cherries, along with lots of new French oak. It’s also very tannic, but the wine isn’t likely to improve in the long haul, so enjoy it now and over the next few years."

It's hard not to think of Napa Valley when thinking of California wines. The region is, after all, the one that brought world recognition to California wine making. The area was settled by a few choice wine families in the 1960's who bet that the wines of the area would grow and flourish. They were right. The Napa wine industry really took off in the 1980's, when vineyard...Read More About Napa Valley
(cab-uhr-NAY sow-veeh-yawn) King of Red Many refer to Cabernet Sauvignon as the king of red grapes. Perhaps that title is due to its ability to grow worldwide in a number of climates, or to the fact that it produces wine with such character yet such diversity. Either way, this grape is responsible, as a whole or a partner, for some of the greatest wines in the world. In Bordeaux,...Read More About Cabernet Sauvignon
