Sirita Cabernet Sauvignon, Napa is 95% Cabernet Sauvignon, 50% of which was grown in Soda Canyon in a vineyard known as the Coliseum Block. This extremely low yield vineyard was situated on an extremely steep slope and was removed the following year. The other half comes from a small Coombsville vineyard scarcely more than an acre which was thinned and harvested under my direction. My hands were blue with cold for hours since the fruit came in at around 40 degrees Fahrenheit, since it was harvest very late in the October. The small amounts of fruit were fermented separately in open top waffle bins and punched down. An addition of 5% Merlot was made to round out the flavors. It was aged in 50% new Taransaud oak barrels for 18 months. This is a robust, vibrant yet not angular Cabernet Sauvignon, one that can be enjoyed with a steak tonight, but which will reward cellaring. The total production of this was limited to 170 cases.
