Simi's New Zealand-born winemaker Nick Goldschmidt makes a Sonoma County Shiraz in the Australian Style. The Syrah grapes come primarily from vineyards in the Northern Alexander Valley and Simi's Chalk Hill vineyard at the southern tip of Alexander Valley. After harvest, the grapes are rotary fermented, increasing skin to juice contact to develop deep color and robust forward fruit. When the wine is nearly fermented dry, it is moved to barrel where it finishes its fermentation, adding mouthfeel and texture to the wine. Finally, it is aged in American Oak for eight months.
