    Winemaker Notes

Our Sonoma Cask Cabernet Sauvignon is a dark red color with dusty and ripe blackberry qualities. The flavor displays powerful black cherry fruit framed by good acidity. This wine should age and improve given its high color extraction, fruit complexities and acidity levels. It finishes only moderately astringent and will complement full flavored foods in its youth. Try this wine now with braised or grilled beef, hearty cheeses, or a leg of lamb. If cellared for four to eight years in good conditions, it will mellow and develop woodsy and chocolatey complexities.

Sebastiani Sebastiani Cherryblock Vineyard Winery Image

Since it’s founded in 1904 by Samuele Sebastiani, Sebastiani Vineyards & Winery has been a Sonoma winemaking tradition. The winery is located in the heart of downtown Sonoma and offers a historic winery with a hospitality center, barrel room with stunning antique redwood tanks, a grand event space and daily tours and tastings.

Planted in 1961, the “Original Vineyard Block” now known as Cherryblock, was planted primarily to Cabernet Sauvignon, which led the winery to create one of Sonoma County’s first varietal Cabernet Sauvignon. Sebastiani has continued its tradition in crafting a variety of Cabernet’s including the iconic Cherryblock, Alexander Valley Cabernet Sauvignon and North Coast Cabernet Sauvignon. Utilizing grapes from a variety of premier growing sites created wines with richness and complexity.

Proprietor, Bill Foley, purchased Sebastiani in 2008 and honors the traditions of Sebastiani while embracing the future. Sebastiani Vineyards and Winery continues to create consistent, highly acclaimed wines crafted by Winemaker, David Nakaji.

While Sonoma County is acclaimed—and rightfully so—for its Chardonnays, Pinot Noirs, and Zinfandels, it also produces exceptional Cabernet Sauvignon. Of the region’s 18 American Viticultural Areas, only a handful produce top-notch Cabernet Sauvignon. These appellations include Alexander Valley, Knights Valley, Sonoma Valley and Dry Creek Valley. Sonoma Cabernet Sauvignons made in these appellations can offer a complex array of aromas and flavors. Fruit notes such as blackberry, blackcurrant, cassis, black cherry and raspberry often are accompanied by hints of graphite, dusty earth, cigar box, toast and vanilla. The varietal has a rich history in Sonoma, and some of these Cabernet Sauvignons and Cabernet-based blends rival the best from Napa Valley.
