Superbly mature and well-drained Cabernet site on rocky east-side of Oakville District AVA, next door to Screaming Eagle. Merlot site is on east-side, next to Paradigm, near To-Kalon and down the hill from Harlan.

    Jonathan Pey makes this wine from vines on the eastern and western benchlands of Oakville, blending a luscious cabernet with high notes of dewy strawberries and long flavors of black currants. Oak comes up to meet the fruit, darkening it to purple tones and spicy scents of mincemeat, but the wine feels fresh in the end, a sleek cabernet sustaining its energy straight through. (400 cases)

Winemaker Abigail "Abi" Horstman Estrada sources small lots from a range of climates and soils, providing a diverse palette of flavors and aromatics. She honed her winemaking chops in Italy, New Zealand, and Israel and worked for prestige brands like Markham, Domaine Chandon, and Robert Mondavi in Napa Valley. She crafts Textbook wines by keeping the lots separate, tasting them throughout the year, and then integrating the components to create balanced, complex wines that can be enjoyed independently or with various cuisines.

A noble variety bestowed with both power and concentration, Cabernet Sauvignon enjoys success all over the globe, its best examples showing potential to age beautifully for decades. Cabernet Sauvignon flourishes in Bordeaux's Medoc where it is often blended with Merlot and smaller amounts of some combination of Cabernet Franc, Malbecand Petit Verdot. In the Napa Valley, ‘Cab’ is responsible for some of the world’s most prestigious, age-worthy and sought-after “cult” wines. Somm Secret—DNA profiling in 1997 revealed that Cabernet Sauvignon was born from a spontaneous crossing of Cabernet Franc and Sauvignon Blanc in 17th century southwest France.

The climate is generally warm and agreeable, resulting in year after year of favorable vintages.
