Winemaker Notes

The Paderewski wine is the crowd pleaser. It's a real chameleon, with a lot going on. One minute it's showing Zinfandel fruit and the next it's all muscle and chalk from the Tempranillo component, while the healthy chunk of Mourvedre nicely holds everything together. The Temp is like the 300 pound muscle bound bouncer that's keeping everybody in line! Earth, spice, bitter chocolate, coffee beans, and plums, lots of ripe plums. That was last week, by the time you try it who knows what this crazy blend will taste like.

    Surprisingly tannic and structured for a wine that’s normally the most approachable and sexy, the 2012 Paderewski Vineyard checks in as a blend of 45% Zinfandel, 36% Mourvedre, 12% Tempranillo and 7% Petite Sirah. It possesses the classic chalky minerality of the vineyard to go with exotic perfumed notes of black raspberry, plums, brambly underbrush and assorted background meatiness. This all flows to a full-bodied, elegant and polished wine that has solid mid-palate depth and chewy, firm tannin on the finish. Give this a year or more in the cellar and enjoy bottles through 2024.

    Bold and richly structured, this wine shows plenty of personality. Aromas of huckleberry, smoky mocha and herb lead to deep, ripe flavors of savory plum, black licorice and mineral. Saxum Vineyards is focused on producing Syrah, Grenache, and Mourvedre based blends from the Templeton Gap of Paso Robles, California. We let our rocky calcareous soils, steep hillsides, and cooling ocean breezes speak through our wines by keeping our yields extremely low, picking fruit at the peak of ripeness, and using a minimalist approach in the cellar. Production is kept at a total of 2200-2800 cases per year divided between 6 different cuvees, Broken Stones, Heart Stone Vineyard, James Berry Vineyard, Booker Vineyards, Rocket Block and Bone Rock.
