Most wine ranges from 10-16% alcohol by volume. Some varietals tend to have higher (for example Zinfandel and Cabernet Sauvignon) or lower alcohol levels (Pinot Noir and many white varietals), but there is always some variation from producer to producer. Some wine falls outside of this range, for instance Port weighs in closer to 20%, while Muscat and Riesling are usually a bit below 10%.

Winemaker's Notes

Our 2007s, are what I feel is the best vintage yet for Saxum. They are more complex, layered, and concentrated than previous years. These wines have a long life ahead of them due to their great acidity and tannin structure, yet they are enjoyable now because they are so well balanced. This wine might be the most structured blend Saxum produces and because of its density, tannin, and acidity, it needs a few years to unfold. Our wines are never racked off their lees and are bottled unfined and unfiltered.

The Bone Rock blend comes from the Bone Rock block of James Berry Vineyard. We unearthed fossilized whale bones when we terraced it and then needed to use jack hammers to plant the vines.

Blend: 82% Syrah, 13% Mourvèdre, 5% Grenache

"The 2007 Bone Rock, which comes from the James Berry Vineyard (82% Syrah, 13% Mourvedre, and the rest Grenache, also aged 28 months in a combination of smaller barrels, demi-muids, and pungeons), is super as well. Like its late-released sibling, it has an inky/purple color to the rim and an extraordinary, soaring set of aromatics consisting of spring flowers, pepper, graphite, blackberry and blueberry fruit with hints of raspberry and licorice and jus de viande as well. The extraordinary freshness and elegance of this wine leads to a minerality that even eclipses the Heart Stone. The finish goes on for a good 45+ seconds, and the purity is awesome. This extraordinary wine completes the 2007 portfolio of unbelievable efforts from the Smiths."

Saxum Vineyards is focused on producing Syrah, Grenache, and Mourvedre based blends from the Templeton Gap of Paso Robles, California. We let our rocky calcareous soils, steep hillsides, and cooling ocean breezes speak through our wines by keeping our yields extremely low, picking fruit at the peak of ripeness, and using a minimalist approach in the cellar. Production is kept at a total of 2200-2800 cases per year divided between 6 different cuvees, Broken Stones, Heart Stone Vineyard, James Berry Vineyard, Booker Vineyards, Rocket Block and Bone Rock.
